Slow Cooker Lemon Feta Chicken Drumsticks

EASY crock pot chicken - ONLY 5 ingredients!

EASY chicken dish – only 5 ingredients that do not count S + P! Skinless chicken drumsticks are seasoned with lemon, oregano and spices which are then slowly cooked in the crock pot. When done, they are topped with freshly grated feta – YUM!

Occasionally I like to take recipes I usually make in the oven and try them in my slow cooker. Some of you may recognize this roasted lemon fat chicken recipe from the archives. Often they convert nicely to the slow cooker with some small changes. These drumsticks had fallen off the bone, with great flavor, and the only difference was rather than adding feta and roasting them in the oven, I served the chicken on a platter and added the freshly grated feta cheese, then melted from the heat from the lower thighs. I highly recommend buying part of the feta and tearing it myself, it is moist and tastes so much better. I served this with this massaged raw kale salad using feta instead of parmesan – a light inexpensive meal.

And as so many ask, I have the 6 Quart Hamilton Beach Set & Forget forgotten programmable slow cooker. I love it because you can adjust the time you want it to cook and it automatically gets hot when done. It also has a probe for meat that automatically closes when done. I hated my old crock pot, it burned everything and my food had a weird taste. This crock pot is so big, I actually own two!

Slow Cooker Lemon Feta Drumsticks

  • 8 skinless chicken drumsticks (about 30 oz total)
  • • kosher salt and freshly ground pepper
  • • 2 teaspoons garlic powder
  • • 1 tablespoon dried oregano
  • • juice of 1 lemon
  • • 1/3 cup feta cheese, freshly grated
  • Season the chicken with salt, pepper, garlic powder, oregano and lemon juice.

  • Place in slow cooker and cook on HIGH for 4 hours or until chicken is no longer pink in the middle near the bone.

  • When the chicken is cooked through, sprinkle with grated feta and cover until the cheese has melted.

* My drumsticks were small, I weighed the cooked meat of the bone on one, and it weighed 2.5 oz. This is how I calculated points as there was no skin-free on the bone possibility. If yours is bigger, adjust.
