Slow Cooked Pumpkin Butter

I am a big fan of my slow cooker homemade apple butter. Before I started cooking and baking at home, I shopped just because it was so simple. Store-bought apple butter and pumpkin butter are quite expensive. Since they are both so easy to do at home, I have now cured my addiction with homemade products.

Many fall mornings I will brew my coffee and leave English toast or muffins in the roaster. The toasts and muffins are great with butter, but add a little apple butter or butternut squash butter and a slightly boring breakfast gets yummy. I am looking forward to adding this homemade pumpkin butter to the easy pumpkin pie cookie recipe that I shared with you last week, I know it will be great.

This slow-cooked pumpkin butter recipe is very simple. Just a few ingredients cooked in the slow cooker and you'll have wonderful homemade pumpkin butter. Your house will smell amazing in no time.

INGREDIENTS 30 oz pumpkin puree 2/3 cup apple juice 1 teaspoon vanilla extract 1 tablespoon cinnamon 1 teaspoon nutmeg 1 teaspoon ginger 1/2 teaspoon clove 1/4 teaspoon allspice 1/2 cup sugar 1 cup brown sugar pinch of salt

ADDRESSES Add all ingredients to slow cooker and stir. Cover and simmer for 2 hours. Remove the lid, stir and cook for an additional 1-2 hours until the mixture has darkened and thickened. Turn off the slow cooker and allow to cool. Transfer to jars and refrigerate.
