Buttered chicken is a total weakness of mine, and until now, I thought it had to be very heavy. But this slow-cooked butter chicken recipe is lighter without sacrificing flavor at all!

You are going to be impressed with this recipe! It has a lot of flavor, despite not skipping anything, and despite the fact that there is no cream or butter.

I'm sure traditionalists are going to put their noses on my healthy buttered chicken, but if you're looking for all the flavors of buttered chicken, without the fat and calories, you'll love it!

How to Make Crockpot Buttered Chicken

For this recipe, we are using tomato sauce (tomato puree, not tomato sauce!), Coconut milk, and lots of spices.

Mix everything together with cubed boneless and boneless chicken thighs and cook.

Just before serving, we are going to add 3 tablespoons of almond flour and a teaspoon of lemon juice. This has two purposes:

  • almond flour helps the sauce become delicious, thick and creamy
  • lemon juice really increases the taste of chicken crockpot butter

How to assemble this buttered chicken as a freezer crockpot meal

Crockpot Freezer Meals are a staple in my freezer and are an absolute life saver during busy weeks! Here's how you can turn this Indian butter chicken recipe into a freezer crockpot recipe:

  • Gather all the ingredients in a gallon freezer bag or large reusable food prep container (Ikea has good larger glass containers, but they're pretty heavy)
  • Squeeze out as much air as possible.
  • Freeze completely for up to 3 months.

So incredibly simple! When you're ready to cook, you'll need to defrost completely before you put everything in the slow cooker and cook as instructed.

Can I use skinless, boneless chicken breasts for this slow cooker butter chicken? If you can! Change an equal weight and reduce the cooking time to 3-4 hours.

Can I add vegetables to this healthy butter chicken recipe? Yes, but I prefer to add them towards the end of cooking (approximately 1 to 1 1/2 hours before serving). That way they don't get soft! I think little cauliflower flowers and frozen peas would be great in this recipe.

How can you call this chicken buttery when there is no butter? Hahaha This is the “Denise-ified” version of buttered chicken, I'm certainly not saying it's authentic, but I must say I prefer this to the traditional heavy version (call me crazy!)

  • 2 pounds boneless, skinless chicken thighs (cut into large cubes)
  • 14.5 oz. Tomato sauce (1 can; NO tomato sauce!)
  • 13.5 oz coconut milk (full fat; 400 ml)
  • 1 teaspoon of garam masala
  • 1 teaspoon of tandoori masala
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon onion powder
  • 1 teaspoonful of garlic powder
  • 1/2 teaspoon salt

Before serving

  • 3 tablespoons of almond flour
  • 1 teaspoon of lemon juice
  • 1/4 teaspoon of salt (or adjust to taste)


  • Combine all ingredients in a 6-quart slow cooker.

  • Cook over low heat for 5 hours or on high for 3 hours.

  • Just before serving, add the almond flour, lemon juice and adjust the salt to taste.

Crockpot Freezer Meals

  • Combine all ingredients in one gallon size freezer bag, 1.5L reusable silicone freezer bag or storage container.

  • Squeeze out as much air as possible and freeze it for up to 3 months.

  • Thaw completely before cooking as indicated above.

Lunch portions in the freezer

  • Serve the butter chicken with rice (or quinoa) and steamed vegetables in freezer-safe food preparation containers.

  • Chill completely, then freeze for up to 3 months.

  • Thaw completely before microwaving until hot.
