I like to use very ripe bananas. Like, so mature that the skin is black, and my husband is begging me to remove them from our kitchen counter :-). The more ripe the banana, the sweeter it is, the easier it is to puree and the more sweet it adds to the bread.

Can you make banana bread with fresh bananas?

Yes! If you only have fresh bananas, don't worry! One trick is to place them (peel them) on a baking sheet and bake them in the oven at 350 degrees F for about 6-8 minutes. This is a great trick to quickly ripen bananas!

  • 4 bananas, about 1 1/3 cups, crushed
  • 1 large egg
  • 1 tablespoon of vanilla extract
  • 3 tablespoons light brown sugar
  • 2 tablespoons granulated sugar

  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour (white or whole white wheat)
  • 2 tablespoons unsalted butter, melted

Instructions

  • Grease a standard 9 × 5 '' bread pan (I also like to line the bottom of the tray with parchment paper to make sure the stick doesn't stick).
  • Crush the bananas in a bowl. Add the egg, vanilla, brown sugar, granulated sugar, and cinnamon and stir well to combine.
