We have just returned from the beach. We had such a great time relaxing on the beach and enjoying all the food on the beach! It was a great way to #CoastIntoSummer! We wanted to stay forever. Chicken Legs really wants to move to the beach permanently. Since we are not going to move to the beach any time soon, I decided to bring us to the beach with this pan of prawns with shrimp from Santa Fe.
The good people of SeaPak Shimp and Seafood Company He sent me some samples of his products. I decided to use the Shrimp Scampi It had tons of great lemon and garlic flavors. This Santa Fe Shrimp Shrimp Skillet is ready in about 20 minutes and only uses one skillet! I love this type of dishes.
We loved all the vegetables and citrus flavors in this dish. It was easy to make and it didn't overheat the house when I made it. This makes a great summer lunch or quick dinner and can easily double for a crowd. Thanks to SeaPak for the inspiration!
Skillet of prawns and prawns from Santa Fe serves 3 (Printable recipe)
- 1 package (12 oz) SeaPak Garlic Prawns
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can of tomatoes and green chilies diced Rotel, drained
- 1 cup frozen corn
- 1 cup instant white rice
- 1/2 cup chicken broth
Preheat the pan over medium-high heat for 1 minute. Arrange frozen shrimp in a single layer in a skillet. Sauté for 7 to 8 minutes or until shrimp turn orange on the outside and turn opaque white on the inside. Remove shrimp from skillet and set aside.

Add beans, Rotel, corn, rice, and chicken stock to the skillet. Stir to combine. Boil it. Reduce heat to low; Cover and simmer 10 minutes or until rice is tender. Add shrimp and cook on lowest setting for an additional 2-3 minutes, until shrimp are hot.
