There are some flavors that I could never tire of, there are flavors that have always been in my life and probably in many people's lives. Like this simple vegan broccoli soup, it is classic, simple, delicious and very easy to cook. I love this type of recipes that I know my kids will definitely eat and which I can have on the dinner table in a pinch.

And that it is full of fiber? And that its superpowers protect us from cancer, have a bad heart, against weak bones, etc. I think it's worth eating, right ???

Simple vegan broccoli soup

This simple vegan broccoli soup is delicious and made with only three ingredients.

Calories: 69kcal

  • 1/2 white onion coarsely chopped
  • A drop of olive oil or another vegetable oil or a tablespoon of water
  • 1 head of broccoli
  • 4 cups of water or vegetable stock
  • salt and pepper
  • Add the oil to a soup pan and add the onion for approx. 6-8 minutes until very soft and the edges begin to turn brown.

  • Add broccoli and water or vegetable stock, cover and leave on medium heat for approx. 15-20 minutes, or until the broccoli is very soft.

  • When done Add a pinch of salt and pepper and mix until creamy.

  • Check for spices and adjust if necessary.

For serving, use raw broccoli flowers, seeds, nuts or corn.
