How to Make Guinness Meatloaf

If you make the whole pie, take a look at our homemade pie crust. It is a butter recipe and can be done in advance.

To make the cake, brown sausages everywhere. They do not need to be fully cooked, just browned. Transfer them to a plate and then cook the onions and carrots with garlic. When the vegetables begin to soften, add butter and flour to make a roux. The butter and flour mixture will help thicken our sauce.

Sausage Pie, Cheddar Cheese, and Guinness Recipe

  • PREP 10mins
  • COOK 40 minutes
  • TOTAL 50 minutes

This sturdy tart is delicious and covered in dough, but you can easily sauté it and serve the sausages on mashed potatoes.

Makes about 6 servings.

Will need

1 tablespoon of olive oil

6 Bratwurst sausages

1 medium onion, cut into 1/4-inch half moons

3 medium carrots, cut into 1/4-inch rounds

3 garlic cloves, minced

1 tablespoon butter

1 heaping tablespoon of flour

1 cup beef broth

1 cup Guinness Stout beer (about 3/4 bottle)

1 cup shredded cheddar cheese

Salt and freshly ground black pepper

Puff pastry topping

1 large egg

1 tablespoon of water or milk

1/4 cup shredded cheddar cheese

1 pie crust (9 inches), check out our homemade pie crust recipe

  • Make filling
  • Heat oven to 375 degrees F.

Heat the oil in a large deep pot over medium heat. Add the sausages and brown on all sides. Transfer the sausages to a plate, and then add the onions and carrots to the pot. Cook, stirring occasionally, until the onions begin to soften, about 5 minutes. Add garlic.

Add the butter and flour, then cook, stirring constantly for a minute until the flour has been absorbed and darkens. Add the stock and beer. Bring to a simmer and then add sausages back to the pot. Simmer, uncovered, until sausages are well cooked, about 8 minutes.

Remove sausages and cut into 1/2 inch slices, then add back to the pot. Add 1 cup of cheese to the sauce. Try seasoning and then adjust with salt and / or pepper.

    • To end
    • Do an egg wash by beating the egg and the water until combined.

Place the filling in a 2-quart baking dish and brush the top and sides of the baking dish with egg.

Shape the dough to cover the top of the baking sheet. Cover the baking dish with crust. Brush top of crust with additional egg and top with remaining 1/4 cup cheese. Bake in the oven until the crust is browned on top, about 30 minutes.

Adam and Joanne's advice

  • If you use store-bought dough, you'll probably be in a circle. You may need to use two circles of dough to cover the baking dish (depending on the shape of the dish). If you make your own homemade crust, right after you make it, shape the dough in a similar way to the baking dish you plan to use.
