  • 500 g of sausage
  • 150 g grated pecorino cheese
  • 100 g low-fat cottage cheese
  • 2 eggs
  • 125 ml cream
  • 2 ml ground nutmeg
  • 2 g thyme
  • 100 ml fresh white breadcrumbs


  1. Preheat the oven to 220C.

  2. Skin sausages, and with wet hands, firmly press the sausage meat evenly at the bottom and to the sides of a 23 cm flan dish to form a crust.

  3. Sprinkle half of the grated cheese over the tart dough.

  4. Mix the cottage cheese, eggs, cream and seasonings and pour them on the crust. Spread evenly.

  5. Mix the rest of the cheese and breadcrumbs and sprinkle on the cake.

  6. Bake at 220 ° C for 15 minutes, then reduce heat to 175 ° C and bake for another 25 minutes or until the top is golden brown and the filling is firm.


Pecorino can be substituted with Parmesan cheese or Cheddar cheese.

It can be served hot or cold. I prefer cold: make two and keep one for snacks over the weekend.
