Snezhana Goldfild wrote with this recipe for apple kvass (яблочный квас). I knew I had to try it, so I bought ingredients the next day and got to work. It really was as she described it as "very refreshing." It's easier than the classic kvass of bread I posted earlier and just as good. I hope to have kvass more often now that I have such an easy recipe.

I mentioned this recipe to my mother and it brought back memories of her childhood; his brothers would go to the forest and collect birch juice. Her mom added yeast and dried pears for coloring and drank birch kvas throughout the summer.

Now where do I find the birch juice? Wouldn't it be great ?!

Going back to apple kvas – Snezhana mentioned that it can be made with fresh apple juice – I will have to visit mom's juice maker for that. Snezhana: Thank you very much for this wonderful recipe for kvass. It is sure to become a family favorite!

Ingredients for apple kvass:

8 cups apple juice (of any kind, fresh or concentrated) 1/2 cup white sugar 1/2 teaspoon dry active yeast 1/2 teaspoon dark molasses (or 1 teaspoon instant coffee), used only for the color 6 cups of filtered water

How to make apple kvass:

1. Fill a 16-cup glass jar with 8 cups of apple juice.

2. Add 1/2 cup sugar, 1/2 tablespoon yeast, and 1/2 teaspoon molasses, then stir until sugar dissolves. Finally add water.

3. Cover with several layers of gauze or a cotton cloth and place an elastic band over the edge of the jar. Let stand on the counter for 18 hours, then refrigerate. Once it's completely cold, you can remove the cheese cloth and screw the lid on. If you put the cap on while it is hot, too much pressure will build up inside the bottle. This is especially dangerous with a plastic bottle (KA-BOOM!)

Serve Kvass once it is completely cold.

Notes: Snezhana suggested: 4-8 heaping tablespoons of sugar (7 tablespoons = 1/2 cup, which was quite good!) Instead of using a cloth on top, you can also make holes in the lid while sitting on the counter.
