Do you like eggplant? It is certainly not our favorite vegetable, but only because we had little experience preparing it until now. So far we only have a couple of eggplant recipes on the blog.

Since our summer vacation in Sardegna, Italy, we have become. The chef slightly changed his mind when he served us a tray of the most delicious oven roasted vegetables (yes, including aubergines) with a drizzle of olive oil. Let me tell you it was heaven. Italians know a thing or two about good food, that's for sure.

Upon returning home, we immediately decided to try cooking more with aubergines.

These roasted stuffed aubergines are topped with a minced meat filling and a pinch of grated, melted, and perfectly baked cheese.

Now, we know that we often don't share meat-based recipes on the blog, but sometimes a recipe pays off. Especially one that uses fresh, high-quality meat, like this one.

Roasted Stuffed Eggplants

Roasted Stuffed Eggplants with Ground Beef are a great-tasting, gluten-free, low-carb, and keto-free lunch. Perfect homemade food!


  • 4 aubergines
  • 1 tablespoon of olive oil
  • 1 onion
  • 1 carrot
  • 1 small celery stalk
  • 2 cloves of garlic
  • 1 tablespoon of tomato paste
  • 500 grams of minced meat (pork and mixed beef, we use the Anton brand)
  • 1 tablespoon of balsamic vinegar
  • 400 grams of diced tomatoes
  • water as needed
  • 1 bay leaf
  • 1 teaspoonful of oregano
  • pinch of salt
  • pinch of black pepper
  • 4 tablespoons of grated cheese
  • 1 tablespoon chopped chives


  1. Preheat oven to 180 ° C / 360 ° F.
  2. Cut the aubergines lengthwise, scoop out the meat to create pots. Season with salt and spread with a little olive oil. Place the eggplants on a baking sheet covered with baking paper, cover with foil, and place in the preheated oven.
  3. Bake for about 30 minutes, or until the eggplants soften. Bake uncovered for the last 10 minutes.
  4. Chop the collected eggplant meat. Finely chop the onions, carrots, celery and garlic.
  5. Prepare the meat filling. Season the ground beef with salt and pepper and mix to combine.
  6. In a large skillet, heat a tablespoon of oil and add the minced meat and cook, stirring occasionally, until golden and crisp. Once cooked, remove from the pan.
  7. In the same skillet, add the minced and sautéed eggplant meat until smooth. Remove from the pan.
  8. To the skillet, add the chopped onions, celery, and carrots and fry until the vegetables are tender and the onions become translucent, or about 5 minutes. Then add minced garlic and tomato paste, and stir to combine.
  9. To the skillet, return the cooked minced meat and eggplant meat, add a bay leaf, a tablespoon of balsamic vinegar, season with salt and pepper, and pour the diced tomatoes and a splash of water.
  10. Simmer for about 20-30 minutes, stirring occasionally. Once this is done, remove the bay leaf.
  11. Top meat sauce on top of roasted eggplant pots. Sprinkle with grated cheese and return to the oven for another 5-10 minutes, so the cheese melts.
  12. Serve with a pinch of chopped chives and a side of salad, potatoes, or couscous.
