Mix them with a little olive oil and fresh herbs, and then let the oven work its magic. Once they're crispy and golden brown, sprinkle on some Parmesan cheese and prepare to be amazed.

Ingredients

  • 2 (15 ounce) cans chick peas (chick peas)

  • 1 tablespoon of olive oil

  • 2 tablespoons chopped fresh rosemary

  • 2 teaspoons minced fresh thyme

  • 1 teaspoon minced fresh oregano

  • ¼ teaspoon of salt

  • ¼ cup grated Parmesan cheese

Instructions

  • Heat oven to 425F. Line a large baking sheet with parchment paper or lightly grease with nonstick cooking spray. Set aside.

  • Using a strainer, drain and rinse the chickpeas. Lay them out on a counter or flat surface lined with paper towels and pat dry. I like to dry them several times and keep them on the counter for 10-15 minutes to dry. The drier the chickpeas are, the crisper they will become when they are baked. I also like to remove some of the skins as they will start to come off when they dry. But if you prefer to leave the skins on, they are just as good!

  • Once the chickpeas are dry to your liking, spread them out in a prepared skillet. Drizzle with olive oil and sprinkle with rosemary, thyme, oregano, and salt. Mix to cover and spread in an even layer.

  • Bake for 50-55 minutes, or until chickpeas are crisp and lightly browned.

  • Remove from the oven and sprinkle with Parmesan cheese.

Notes

Dried herbs can be used in place of fresh herbs if necessary.
