Weekday garnish recipes can quickly enter “routine territory,” am I correct? You know what I'm talking about, where you cook the same two or three vegetables, the same way, night after night, almost on autopilot.
While there's nothing wrong with sticking to the easy cooking techniques you're familiar with, there are a few simple ways you can transform a boring garnish into something magical.
My secret weapon? Roasted garlic! Easy to make and full of flavor, simply drizzle an entire garlic head with olive oil, salt, and pepper, and then roast it until it's sweet, smooth, and caramelized.
Follow my step-by-step tutorial on roasting garlic cloves in the oven to learn how to prepare!
Once you've roasted a bunch of garlic cloves, they're perfect for mixing with steamed vegetables (like these green beans), pasta, soups, salad dressings, and more.
While we always love green beans (my youngest son is obsessed!), This recipe would work great with almost any vegetable on hand or in season, including asparagus, broccoli, cauliflower, and more.

For a little sparkle and acidity, I also add a little fresh lemon juice. If you don't have it on hand, rice vinegar or lime or balsamic juice would also work well.
Your fork is waiting.
