one) To make the bacon Brussels sprouts: Preheat your oven to 400ºF (200ºC). Grease a cast iron skillet with 1 tablespoon of olive oil.

two) In a medium bowl, combine the Brussels sprouts in half, 2 tablespoons of the olive oil, salt and stir to combine.

3) Transfer the Brussels sprouts to the cast iron skillet, cut them side down and roast in the oven at 400ºF (200ºC) for approximately 20-25 minutes. During the last 5-10 minutes of roasting, turn the Brussels sprouts over so that they are golden brown, the cut sides should be well browned.

4)In the skillet, combine the roasted Brussels sprouts, crisp bacon, and chopped dried cranberries, and mix to combine. Add 2 tablespoons of maple syrup and stir to combine. Sprinkle with ground black pepper, to taste. Serve the Roasted Brussels sprouts with bacon and blueberries immediately. Enjoy!
