Let me sit down and look at this photo again. I want to relive this roast chicken sandwich. Oh it was so good!
Roasted chicken slices stacked on a homemade brioche bun with fried mushrooms, creamy garlic mushroom sauce, crispy bacon, and tender spinach leaves.
I also made this step a bit more mischievous, lightly toasting the inside of the brioche and then finishing it in the pan with the remaining fat from the bacon.
Sometimes you just have to finish your toast with bacon.
I am reasonably sure that the happy endorphins that are released by biting into bacon toast and fat do away with cholesterol. No?
My theory falls within the same area of gastronomic phenomenon as the one that says' having an extra shot of espresso in your café con leche increases your metabolism enough to cancel the calories in milk 'and' you can eat a whole box of chocolates in bed, for breakfast, on your birthday, and you won't feel sick and fat when you finally get up. '

Oh, did I tell you that today is my birthday and I'm writing this in bed next to my box of chocolates…
Yes, I am 36 years old today. I grimly mentioned to Chris that I'm now closer to 40 than 30, and he kindly pointed out that I've been closer to 40 since the day after my 35th birthday. While I love him very much, I want to hit him sometimes.
Quickly made up for it TOTALLY CHEATING ME today. Among my pile of presents was a new bike! Now that my youngest son Lewis is riding well in his two-wheeler, it was time for me to ride again (I haven't had a bike in about 5 years), so I can't wait to go out for a drink. Family bike rides.
Chris also bought me a beautiful set of Damascus steel knives! I saw them on a knife skills course that I did last month and have been suffering for them ever since, but they were too expensive so now I have 5 ridiculously knives Sharpening for every cut job in the kitchen (and A&E department waiting).
Ok, I need to stop talking before I really eat this box of chocolates.

Roast Chicken Burger and Creamy Mushroom Garlic
This Creamy Garlic Mushroom Roast Chicken Burger features Homemade Brioche Roast Chicken with Creamy Garlic Mushroom Sauce, Crispy Bacon, and Spinach. The best sandwich. Never.

- 4 brioche burger rolls if you want to make them yourself, the recipe is here
- 2 tablespoons of olive oil
- 8 medium chestnut mushrooms or mini portabella are good, sliced
- good pinch of salt and pepper
- 6 slices of smoked or smoked streaky bacon, depending on your preference, cut in half
- 2 garlic cloves, peeled and minced
- 6 tablespoons double / whole cream
- 1 cup (100 g) grated strong cheddar cheese
- 1 large handful of tender spinach leaves approximately 25 g
- 2 large well-seasoned roasted chicken breasts, sliced (skinless): I like to roast a whole chicken and use the breasts for this, and then the rest of the meat for a soup like this
Place two pans on medium to high heat. Put 1.5 tablespoons of oil in one and 1/2 teaspoon of oil in the other. Once the oil is hot, place the sliced mushrooms, salt and pepper in the frying pan with more oil and the streaky bacon in the frying pan with less oil. Cook mushrooms and bacon until dark and slightly crisp.
Place the bacon and half of the mushrooms on a hot plate.
Cut the brioche rolls in half and lightly toast the inside under the grill. When toasted, place the rolls cut side down in the bacon skillet and allow the rolls to cook a little more in the remaining bacon fat. Remove once the rolls are darker and the fat has been absorbed. Place the rolls on plates.
Add the garlic to the remaining mushrooms and simmer for a minute, then add the cream and cheese and bring it to a smooth bubble. Let it bubble slightly as you start to put the patties together.
Divide the spinach between the 4 hamburger rolls, then top with the fried mushrooms and sliced chicken. Place the mushroom sauce with cheese on top of the chicken and then top with the crispy bacon. Lay the top of the burger roll on top and serve.
