- ½ red pepper
- ½ green pepper
- 1 beautiful and ripe tomato
- 150 grams of mushrooms
- 1 bunch of young garlic
- 1 artichoke
- 300 grams of bomba rice
- 900 milliliters of water or broth
- 400 grams of ribs cut into small pieces
- 1 small glass of olive oil
- 400 grams of Iberian pork
- 1 rosemary branch
- 1 branch of fresh thyme
- 1 teaspoon salt
- Saffron to taste
- 1 teaspoon of sweet paprika

We heat the oil in the pan and on the go stir-frying the vegetables Clean and chopped off the winter paella, and when they are fried, set them aside on a plate.
In the same oil fry the ribs and the Iberian pork cut into small pieces.
Once the meat is browned, add the grated tomato and we fry it well.
Then we incorporate the vegetables from the winter rice to the paella pan, the teaspoon of paprika and the bomba rice, and fry for a couple of minutes.
We add the water or the meat stock, the saffron, salt and thyme and rosemary sprigs.
Boil the winter rice with sautéed vegetables over high heat for 20 minutes until the broth is consumed. Halfway through cooking we check the salt point.
