- 1 bottle of cooked white beans (400 grams)
- 2 pieces of chorizo
- 2 ripe tomatoes
- 1 small onion
- 1 carrot
- 1 clove garlic
- 1 jet of extra virgin olive oil
- 1 pinch of salt
- 1 teaspoon of smoked sweet paprika
- 1 teaspoon of food coloring for paella (optional)

We open the jar of beans and pour them into a drainer. We wash them very well with water to remove the remains of the liquid that preserves them and let them drain.
Meanwhile, peel the onion and chop it Very fine. We put a frying pan with a splash of olive oil on the fire and when it is hot add the onion to sauté it.
Peel and chop the garlic and we add it to the frying pan to continue with the preparation of the sofrito of the stew of white beans with chorizo.
Peel and chop the carrot and we also put it in the pan. We are removing from time to time.
By last, we grate the tomatoes and add them. Fry until the vegetables are done.
Once our sofrito is ready, we can add it as is to a casserole or pass it through the mixer so that it is homogeneous and the vegetable pieces are not noticeable, to your liking! So, we put the sofrito (crushed or not) in a wide saucepan, add the washed beans and drained, add water until covered and add salt and a little bit of sweet paprika. If we want it to be more orange, we can add coloring for paella, although it is optional. Stir well and put on medium heat.
We cut the chorizo into pieces and when the content of the casserole starts to boil add it. We stir frequently and if necessary add more water so that the white bean porridge with chorizo does not burn.
Trick: The chorizo can also be put whole, although it is more comfortable to chop it before adding it to the casserole.
Let boil about 15-20 minutes, we remove and we can now serve this delicious dish of white beans with vegetables and chorizo. We can also prepare the porridge in advance and heat it at lunchtime, from one day to the next it is even better because it has settled! To accompany, a salad of lettuce and goat cheese or some baked potatoes are great.
