- 2 medium squid
- 2 garlic cloves
- 1 bunch of fresh parsley
- 1 jet of oil
- 1 jet of white wine
- 1 pinch of salt

The first step will be clean and cut the squid in strips. Remember to remove all the interior and the skin, if you prefer you can also buy squid rings already clean and leave them as is or cut them.
On the other hand we do the mashed garlic and parsley. To do this, chop the garlic and finely chop the parsley. We recommend chopping it in a mortar together with a little oil, so that it takes on the flavor.
We heat a frying pan and when it is hot, we add the squid together with the mashed one that we have prepared previously. The mashed one already has some oil so it will not be necessary to add more in the pan.
We remove everything well and add a splash of white wine, we keep cooking over medium heat and let reduce until the alcohol evaporates and the squid is tender.
Once reduced, you can already serve the squid sauteed with garlic and parsley. You can accompany this dish with any potato garnish, such as some baked potatoes or poor potatoes, just as I have done.
