I absolutely love chia pudding. Some of my other favorites that can easily be turned into pop are Superfood Triple Berry Chia pudding, Coconut Buckle Chia pudding and Mango Coconut Chia pudding.

Frankly, when I thought of this idea, I didn't know what to expect. I recently saw a recipe for rice pudding pops that triggered this idea. I LOVE chia pudding and I love coconut milk so I figured out how bad they could be, so I basically recreated my mango coconut chia pudding using raspberries instead of mangoes.

The results … fabulous!

The texture, flavor and the small fruit cuts in each bite. They are refreshing and delicious and almost guilt free! Don't be scared, try them! I used Nu-Natural liquid stevia (my favorite stevia), but you can use whatever sweetener you prefer and sweeten it to your liking.

And by the way, if you're new to chia … chia (yes, the same chia as a chia pet) is an ancient grain eaten by the Mayans and Incas. It has a long list of essential fatty acids that support heart health, plus fiber that helps support the normal functioning of the digestive tract. It also keeps you full for extended periods, so it's great to add grains, muffins, etc. If you can't find them in your health food store or Trader Joe's, you can buy them on Amazon.

  • 1/2 cup little coconut milk
  • 1/2 cup cup of unsweetened almond milk
  • 3/4 cup raspberries
  • 2 tablespoons chia seeds
  • 1 tablespoon sweetened shredded coconut
  • 8 drops of Nu-Naturals liquid stevia or sugar / honey to taste
  • Combine all ingredients in a large container.

  • Mix well and close the container; refrigerate for 4 hours, then expand the chia.

  • Pour into 4 popsicle molds and freeze overnight.
