We make a lot of macaroni and cheese in our house. It is a dish that everyone loves, both children and adults! It can be served as a main dish, garnish or even as an appetizer.

Lately, we've been experimenting with different cheeses and new seasonings for our macaroni and cheese recipes, and this Ranch Macaroni and Cheese is one of our new favorites.

How is Ranch Macaroni and Cheese made?

Like most macaroni and cheese recipes, you'll start by cooking some of your favorite pastas. Today, we use gemelli, a well twisted corkscrew paste that is tough and supports a thick, creamy sauce.

While the pasta was boiling, we created a roux. A roux is a mixture of melted butter and flour that is cooked into a thick paste. It is the base of many cream sauces, and it is also used to thicken sauces and other sauces.

In a separate bowl, whisk together the ranch seasoning, freshly grated nutmeg, dry mustard powder, white pepper, mayonnaise, Worcestershire sauce, and a few drops of hot sauce, then combine this mixture with whole milk.

You will heat the ranch and milk seasoning mixture in a large pot on the stove until it is steaming and bubbly, then you will add the roux, mixing until well combined.

Then pour the cooked and drained pasta, then add the grated white cheddar cheese and the Fontina cheeses. The strong white cheddar cheese adds a rich cheese flavor, and the Fontina becomes more melted.

What do I serve with Ranch Macaroni and Cheese?

This Ranch Mac and Cheese can be served as a hearty meatless meal with a green salad and our favorite vinaigrette, or with a little steamed broccoli. This delicious macaroni and cheese can also be an accompaniment to roast chicken or steak tips.

Either way, you can garnish the pasta with cheese with a pinch of chopped parsley if desired, though that's entirely optional.

1 pound of gemelli pasta or your favorite pasta

2 butter spoons

3 tablespoons of flour

1 1-ounce bag dry ranch dressing and seasoning mix

¼ teaspoon freshly grated nutmeg

½ teaspoon dry mustard powder

½ teaspoon white pepper

½ cup mayonnaise

½ teaspoon Worcestershire sauce

Few jets of hot sauce, we use Cholula (optional)

3 cups whole milk

8 ounces shredded cheddar cheese

8 ounces shredded Fontina cheese

Chopped fresh parsley, for garnish (optional)


Put a pot of water to boil and once it boils, salt the water and cook the gemelli underneath, still a little chewy. Drain and set aside.

While the water is boiling, melt the butter in a small saucepan over medium low heat and once melted, add the flour and cook for 3-4 minutes until the smell of raw flour disappears and begins to smell a little nutty. Remove from the heat and set aside.

While pasta is cooking, in medium bowl, mix ranch dressing, nutmeg, mustard, pepper, mayonnaise, Worcestershire sauce, and hot sauce and toss.

Let stand five minutes, then beat the milk and reserve.

After cooking the pasta and emptying the pot, add the milk mixture to the pot and over medium heat, cook the milk mixture until it starts to steam and bubble, then mix in the butter / flour mixture.

Pour the pasta and both types of grated cheese, remove from the heat and mix to combine.

Serve immediately.
