I love casseroles, but sometimes they can take too long to prepare for a weekday dinner. Enter Food Preparation: By preparing some of the ingredients for this broccoli and quinoa casserole, you can mix it up and put it in the oven in under 10 minutes!

To my complete surprise, my one year old son who hates broccoli LOVED this quinoa and chicken casserole with broccoli. It's pretty hard to beat the combination of cheese, herbs, chicken, and quinoa, even with a small broccoli in there too 😉

How to make chicken and broccoli casserole with quinoa

This casserole recipe is super simple, but if you take the time to cook the chicken, broccoli, and quinoa in advance, it's ridiculously simple to make them together for dinner.

  1. Mix cooked quinoa with steamed broccoli, grated chicken, grated cheese, basil, oregano, salt and pepper, chicken broth, and an egg.
  2. Press into 9×9-inch deep baking dish and sprinkle with a little extra cheese.
  3. Bake covered 20 minutes, uncovered 5-10.
  4. Enjoy!

It's really so easy to make this chicken and quinoa casserole with broccoli!

Can I freeze the chicken and broccoli casserole with quinoa? I suspect so, but I have not tried. I would freeze before baking (assembled but not baking). Thaw completely, then bake as directed. Quinoa freezes / thaws surprisingly well.

I don't care about quinoa, can I exchange it for rice? I think this should work, but then again, I haven't tried.

How is the chicken and quinoa casserole heated? You can do this in two ways:

  1. reheat to 350 ° F in the oven. Cover the saucepan to reheat. I love these reusable silicone baking covers to reduce aluminum waste!
  2. microwave individual portions until hot

Ingredients

  • 2 cups cooked quinoa
  • 2 cups cooked chicken
  • 3 cups steamed broccoli
  • 1 egg
  • 1/2 cup chicken broth
  • 2 cups cheese (grated; divided in half)
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper

Instructions

  • Heat oven to 350 ° F. Spray 9 x 9-inch deep baking pan with oil and set aside.

  • In a large bowl, mix the quinoa, chicken, broccoli, egg, chicken stock, half the cheese, and all the spices.

  • Press into prepared baking sheet and sprinkle with remaining cheese.

  • Cover and bake for 40 minutes.

  • Remove the lid and bake uncovered for an additional 5-10 minutes.

  • Enjoy!
