But what always grabs me are the food magazines. Right now, with fall cooking in full swing, I can't help but take a turn and drool over all the candy.

Just a few weeks ago I stumbled upon Paula Deen magazine and, after leafing through it, stopped by with a pumpkin crumb cake recipe.

I fell in love with the crumb topping, but I really wanted to do it with pumpkin instead of pumpkin.

So I did it!

Since I didn't use the pumpkin and opted for a canned pumpkin puree, this cake really gets ready pretty quickly!

It's moist and delicious, and that crumb filling … have mercy! Worth it!

Pumpkin Crumb Cake

The pumpkin crumb cake has a delicious crumb topping that piles up and is perfectly delicious!

Ingredients

For coverage:

  • 1/4 cup butter

  • 1/3 cup brown sugar

  • 1 teaspoon of vanilla extract

  • 1/4 teaspoon of salt

  • 3/4 cup flour

For the mass:

  • 2 cups flour

  • 1 cup brown sugar

  • 1 1/2 teaspoon baking powder

  • 1 1/2 teaspoon baking soda

  • 1 1/2 teaspoon pumpkin pie spice

  • 1/2 teaspoon salt

  • 1 cup of pumpkin puree

  • 3 large eggs

  • 3/4 cup vegetable oil

  • 1/2 cup sour cream or plain Greek yogurt

  • 1 teaspoon of vanilla extract

For icing:

  • 1 cup powdered sugar

  • 2 tablespoons of milk or cream

Instructions

  1. Preheat oven to 350 degrees F. Lightly spray 8 "square baking pan with nonstick spray and set aside.

Addition:

  1. To prepare the topping, start by melting the butter in a small saucepan over medium-low heat. Add brown sugar, vanilla extract, and salt. Stir until smooth. Remove from heat and add flour, then allow to cool completely.

Dough:

  1. Combine flour, brown sugar, baking powder, baking soda, pumpkin pie spices, and salt in large bowl, then beat to combine.
  2. Combine pumpkin puree, eggs, vegetable oil, sour cream (or plain Greek yogurt), and vanilla in another large bowl and mix to mix.
  3. Whisk the egg mixture into the flour mixture until smooth and pour into the prepared skillet. Crumble the topping and sprinkle over the dough.
  4. Bake for 40 minutes or until a wooden toothpick inserted in the center comes out clean. Let cool completely in a pan on a wire rack.

For the cherry:

  1. Whisk the powdered sugar and milk until smooth, then drizzle over the cooled cake. Enjoy!
