I love having cookies on hand when a sweet craving arises. And to be honest, I even eat breakfast sometimes (with collagen coffee as protein).

I decided it was time to take my favorite low carb chocolate chip cookie recipe and convert it to include pumpkin! Why you NEED these pumpkin and chocolate chip cookies! Even my kids were devouring them, so they're kid-approved!

My husband is ready for the pumpkin season to end! (I think you're tired of all the pumpkin recipe tests!) But fear not: I still have recipes for pumpkin pie and pumpkin pie. I am very excited about both of them, because I LOVE the pumpkin!

So what do you need for these cookies?

1/2 cup butter, softened

1/3 cup low carb brown sugar (use this from Gwen’s Nest)

1/3 cup erythiritol

2 large eggs

1/2 teaspoon baking soda

1/2 teaspoon mineral salt

1 teaspoon vanilla

3 tablespoons of pumpkin

1 teaspoon of cinnamon

1 cup THM baking mix

1/2 cup Lily stevia-sweetened chocolate chips

Pumpkin cookies with chocolate chips

Preparation time 10 minutes

Cook time 30 minutes

Total time 40 minutes

Servings: 20 cookies


  • Preheat oven to 350.

  • Butter cream, "brown sugar" and erythiritol until smooth.

  • Add the pumpkin and eggs and beat well.

  • Add baking soda, mineral salt, vanilla, cinnamon, and baking mix and beat until just incorporated.

  • Add the chocolate chips.

  • Using a cookie spoon, place the dough on a parchment-lined baking sheet and bake for 11-12 minutes.


* If you don't have the baking mix, you can use 1/3 cup of almond flour, coconut flour, and flax flour.
