These sweet pumpkin and caramel muffins are perfect for fall. Pumpkin flavor goes surprisingly well with caramel. And there are lots and lots of caramel chips made from scratch muffins. Perfect to pair with a cup of coffee.
Pumpkin and caramel muffins are spiced with lots of fall spices: cinnamon, ginger, nutmeg, and allspice. They make the house smell wonderful while baking in the oven.

These sweet pumpkin and caramel muffins are perfect for fall. Pumpkin flavor goes surprisingly well with caramel.
- 1 3/4 cups all-purpose flour
- 1/2 cup light brown sugar
- 1/3 cup white sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon allspice
- 1/2 teaspoon salt
- 1 teaspoon of baking soda
- 1/4 teaspoon of baking powder
- 2 eggs
- 1 cup canned pumpkin
- 1/2 cup butter, melted
- 1 1/2 cups caramel chips
- 1 tablespoon of vegetable oil
- Preheat oven to 350 degrees and place cupcake pans in 12-cup muffin pan.
In a large bowl, mix together the flour, sugars, spices, salt, baking soda, and baking powder.
In a medium bowl, mix together the eggs, squash, melted butter, and vegetable oil.
Add wet ingredients to dry and stir until combined.
Add the caramel chips.
Mass evenly divided among 12 cups. Bake 20 to 22 minutes.
