I know what you're thinking … two spinach salads in a row? Well, I always keep a Costco-sized tub of green goodness in the fridge, but the truth is, I made this a while back and now I'm starting to share it.

Usually not as it is during the week, for many reasons: I have healthier options at home, I don't have any extra money to waste and I'm usually at home with the kids during lunch. However, from time to time, if I go shopping for long hours, I will indulge in Panera or Chipotle … you know "fast food" with healthier food.

Panera has many delicious options, some healthier than others, but I've heard about this salad that you can order from its "secret menu". That's right, one of the healthiest items they sell was on a secret menu. What sense does that make correct? Keep the light and healthy goodness of this Power Bowl a secret? I miss you

Well, the good news is that it is no longer on a secret menu (and, in fact, I have no idea if they still have something like that); This Power Chicken Hummus Bowl is super simple, nutritious and delicious and one of its lowest calorie salads at 270 calories.

Fact: Food tastes better when you don't have to prepare it. Fact # 2: Food tastes better when you don't have to pay $ 8 for it. So I think these will cancel each other out when you make this salad. If you make this bowl of chicken hummus super easy at home, you'll save a little money and be able to enjoy it for a few days (I packed the leftover salads in separate tupperware so we can enjoy them for lunch another day).

It's very simple: spinach, tomato, red onion, chicken, and their signature coriander hummus (note I don't have the actual recipe for their chicken or hummus, but I did my best). In fact, I published this coriander and jalapeƱo hummus almost 3 years ago (oh please slow down because it looks like it was yesterday). So I just made that recipe, skipped some chicken breasts, and put the rest together.

There is no dressing, which makes it super light and healthy; Just use hummus and lots of fresh lemon juice while dressing. Don't skimp on any of those!

  • 2 large chicken breasts
  • 2 teaspoons of olive oil
  • Ā½ teaspoon of paprika
  • Ā½ teaspoon poultry seasoning (a combination of dried basil, rosemary, sage, marjoram, thyme, and oregano)
  • salt and pepper
  • 12 ounces baby spinach leaves
  • 2 Roma tomatoes, diced
  • Ā½ English cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 lemons, cut in half
  • ā…“ cup chopped coriander to coat
  • For the coriander and jalapeƱo hummus
  • 1 can low-sodium chickpeas, rinsed and drained, skinned
  • 2 garlic cloves, minced
  • 2 tablespoons of tahini
  • 3 tablespoons of fresh lime juice
  • 4 tablespoons of water
  • Ā½ cup packed coriander leaves, chopped
  • Ā½ fresh jalapeƱo, chopped
  • Ā½ teaspoon of salt
  • Ā¼ teaspoon of cumin
  • 2 tablespoons of olive oil


  1. For the hummus, combine all of the hummus ingredients in a food processor and puree until smooth. Transfer the mixture to a storage container and refrigerate until necessary.
  2. Combine the paprika and chicken seasoning and set aside. To make chicken, mash chicken breasts to an even thickness. Season both sides with salt and pepper and paprika and poultry seasoning.
  3. Heat oil in large nonstick skillet over medium heat. Add chicken breasts and cook 10 to 12 minutes or until done. Remove to a plate to let cool. Then cut into thin slices.
  4. Place ~ 2 to 3 cups of spinach in a large salad bowl. Top with tomatoes, cucumbers, red onions, grilled chicken slices (~ 1/2 large chicken breast per salad), half a lemon and a tablespoon of cilantro-jalapeƱo hummus, and a generous pinch of chopped coriander.
  5. Enjoy!


This recipe was inspired by Panera, however I don't know the actual recipe for their chicken or hummus. There are different types of ā€œbird seasoningā€ seasonings, but I used the one that is the combination of dried herbs, not the fine powder that has different ground herbs. The ingredients in my condiment are: basil, rosemary, sage, marjoram, thyme, oregano. If you don't have this mix, just use similar spices.
