Potato Tacos Dorados (or Tacos Dorados de Papa) are so incredibly delicious.

I could eat a dozen in a sitting without blinking. My family could too. Dripped with tomatillo habanero salsa… YUM!

The recipe is VERY easy and a good way to use leftover mashed potatoes. Serve them at your next party, for game day, or chill night out. I know you won't be disappointed.

Here's how to do it

  • Peel and thaw the potatoes.
  • Cover them with water. Cook until soft. About 7 minutes.
  • Empty water. Add salt and pepper.
  • Mash until smooth.

Set aside mashed potatoes until ready to use.

If it is difficult to mash the potatoes, add one sprinkle milk or cream for a creamy texture. To keep this a completely Mexican vegan recipe, use water instead.

Should taco be crispy? Regular tacos are made with corn tortillas that are heated but not crispy. Tacos dorados, taquitos and flautas are crispy as they are fried or baked.

  • Heat tortillas in the microwave. About 1 minute.
  • Lay flat on a surface. Add 1 tablespoon to one side of the tortilla.
  • Fold the other side over.
  • Close with a toothpick.

How do you seal tortillas for frying? The best way to seal a tortilla is using a toothpick. Don't forget to remove it when it is fried and before serving.

If the tortillas fall apart: That's because they have it too much moisture. Either the previously frozen ones were old or they are the closest to the plastic packaging. Those closest to the pack retain most moisture.

  • Put them back in the microwave.
  • Zap them for another 30 seconds. This will help remove the moisture.

If they still fall apart after that, don't use it. They fall apart in the roast.

How long do they last?

  • In the fridge, tacos dorados last up to 3 days. Reheat in the oven, otherwise they will not be so crunchy.

Potato tacos Dorados

These crispy Potato tacos Dorados will compete with your favorite Mexican restaurant. Crunchy bites of taco heaven and incredibly easy to make as well. Add your favorite salsa and enjoy! Equipment

  • toothpicks
  • Potato Masher

ingredients

  • 3-4 medium russet potatoes (or 5 small potatoes)
  • 4 cups of water
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 12 corn tortillas
  • 1 cup oil

Instructions

  • Peel and thaw the potatoes.
  • Put in a stock with the water.
  • Cook until tender.
  • Drain the water.
  • Use a potato machine to mash the cooked potato until smooth.
  • Optionally add a splash of water.
  • Set it aside until ready to use.
  • Heat tortillas in the microwave for 30 seconds.
  • Turn and heat for another 30 seconds.
  • Place a tortilla flat on the counter.
  • Add 1 tablespoon of mashed potatoes to half of the tortilla.
  • Fold over the other half and create a taco.
  • Insert a toothpick into the top of the center of the tortillas and seal the tacos.
  • Set aside and repeat until you are done with all the tortillas.
  • Heat oil in a large frying pan.
  • Fry the tacos in the oil for 2 minutes.
  • Gently turn the taco and fry on the other side for 2 minutes more.
  • Roast two tacos at a time. Do not mix the pan.
  • Place fried taco on a paper towel to drain off excess oil.
  • Cover with aluminum foil to keep warm.
  • Repeat until you are done roasting all the tacos.
