- 5 peeled diced potatoes
- 4 spring onions, thinly sliced
- 250 g thinly sliced bacon slices
- 1 cup whole egg mayonnaise
- 1/2 cup sour cream
Boil the potatoes for about 10 minutes until cooked.
Drain the potatoes and place them in the refrigerator for 1 hour, or in the freezer for 10 minutes.
Cook the bacon in a skillet until cooked and crisp.
Once the potatoes have cooled, mix the mayonnaise, sour cream, bacon, and chives.

- 1 frying pan
Be careful not to overcook the potatoes, you want them to keep their shape.
You may want to add more mayonnaise or sour cream, just taste the mix and decide.
