Growing up, we ate potatoes quite frequently, probably because they were so affordable. I don't know about you, but I loved it when we had grilled potatoes! I usually add a few extra potatoes when we bake or grill them so I can have them for lunch or to make this delicious {and easy!} Twice-baked potato casserole!

This twice baked potato casserole is perfect for vacations, church meals, and gatherings as well, as it's so much easier (you can easily double or triple this for larger crowds!), And it's pretty affordable. Not to mention, who wouldn't love a big scoop on this bacon and potato cheese?

Ingredients

  • 6 medium potatoes, unpeeled, scrubbed, baked
  • 3 cups (24 ounces) sour cream
  • Salt and pepper to taste
  • 1 package (12-16 oz.) Bacon, cooked and minced
  • 1 cup (4 ounces) grated mozzarella cheese
  • 1 cup (4 ounces) shredded cheddar cheese
  • 2-3 green onions, sliced

Instructions

  1. Preheat oven to 350 ° F.
  2. Cut potatoes into 1-inch cubes. Place potatoes and sour cream in medium bowl, stir until potatoes are evenly covered. Place in a greased 13x9x2-in. Baking dish. Spice with salt and pepper. Top with cheeses. Sprinkle with bacon.
  3. Bake uncovered for 20-25 minutes or until cheese is melted and potatoes are hot. Sprinkle with green onion.
