Here's how to do it

  • Remove the stems.
  • Cut lengthwise and remove seeds.
  • Also remove veins.

This is dried guajillo chile and the key ingredient to guajillo sauce and many authentic Mexican recipes.

This method above is how to clean anyone dried chil. You may not be able to remove all seeds and veins.

Don't worry about it. The sauce stays strained, and any remaining bits are then removed.

Pro Tip: Rehydrated chiles can last up to 3-5 days in the refrigerator if stored in an airtight container.

  • Rehydrate all chiles by placing them in warm water.
  • Discard the water.
  • Add the rehydrated chiles and other sauce ingredients to a blender.
  • Blend until smooth.

Many abuelitas (mine included) use the water from rehydration to blend the sauce.

Dried chilies store dust that ends up in the sauce. Eww! Use fresh water to avoid this.

Good news! You can also do this in advance. Chile Colorado freezes extremely well. It lasts up to 7 days in the fridge and up to 6 months in the freezer.

Using frozen or prepared sauce would make the cooking of pork Chile Colorado with Nopales faster.

  • Remove any thorns on the cactus bucket.
  • Cut into strips, then dry across.
  • Boil in water on the oven with salt and baking soda.
  • Empty and rinse well.

Removing thorns from cactus paddles can be a stinging pain.

Words to the wise: Look for nopales who already have thorns removed. Better yet, there are stores that sell them pre-chopped.

FYI: Crossed nopals are slimy. Rinse them well before and after cooking.

You can skip this step completely if you use cooked nopals in a jar.

  • Season the pork with salt, pepper and cumin.
  • Brown the pork.
  • Add the dice onions. Cook for 1 minute.
  • Add the pork broth.

  • Pour the chile colorado into an iron jug with pork using a strainer.

  • Add the cooked nopales.
  • Stir to combine.
  • Burn to a weak for another 5 minutes.

For Chile Colorado sauce:

  • 10 Chile Guajillo stems removed, seeded and conceived
  • 2 Ancho Chile stems removed, seeded and developed
  • 4 cups of water
  • 1 teaspoon salt
  • 1/2 tsp cumin
  • 2 garlic cloves
  • 1/4 onions
  • 2 cups pork broth (or chicken broth)

For the cactus paddles:

  • 2 cactus paddles (thorns removed)
  • 4 cups of water
  • 1 teaspoon salt
  • 1 teaspoon baking soda

For the pork:

  • 2 tablespoons olive oil
  • 3 lbs cubes pork 1-inch pieces
  • 1 tablespoon salt (or chicken broth)
  • 1/2 teaspoon ground pepper
  • 1 teaspoon ground cumin
  • 1/4 onion cubes
  • 2 cups pork broth (or chicken broth)

Instructions

For Chile Colorado Suace:

  • Cut off the stems and remove the seeds and veins on all chiles.
  • Add the chilies to a large stock pot.
  • Cover with water.
  • Boil up.
  • Turn off the heat.
  • Let it sit in the pan for 5-10 minutes, or until it is pliable.
  • Discard the water.
  • Add the rehydrated chiles in a blender.
  • Add salt, foam, garlic, onion and pork to the mixer.
  • Blend until smooth.
  • Set it aside until ready to use.

For the cactus paddles:

  • Carefully remove the thorns (if necessary) with a sharp knife.
  • Rinse the cactus paddles.
  • Cube into 1-inch pieces.
  • Put them in a storage pot and cover with water.
  • Add salt and baking powder to the pan.
  • Cook for 10 minutes.
  • Discard water and rinse the cooked nopales.
  • Set it aside until ready to use.

For the pork:

  • Heat the olive oil.
  • Season the pork with salt, pepper and cumin.
  • Add the pork to the pan.
  • Brown the meat.
  • Stir occasionally.
  • This will take approx. 5 minutes.
  • Add the cubes, onions, and cook for 1 minute, or until translucent.
  • Add pork broth and chile colorado sauce.
  • Mix to combine.
  • Cook for 25 minutes on medium heat.
  • Add nopales.
  • Cook for another 5 minutes.
  • Serve and enjoy!

  • Look for nopales who already have thorns removed. Or buy the performances are nopales. Best option for beginners: Use cooked cactus in a jar. Empty the liquid and it is ready to use.
