Pina colada smoothies {Hello summer}

Hello my dear! I'm Amy from My 3 Monsters. I am super excited to be a part of the Hello Summer series here on I Heart Nap Time. I love Jamielyn's blog, so it's a true honor. I'll be honest, it feels a bit like being asked to sit at the adult table on Thanksgiving! I keep thinking, "You know I don't belong here?" I will do my best not to spill anything while I'm here.

Today I wanted to share one of my favorite things in the summer: Pina colada smoothies! Something about the coconut and pineapple mix and creaminess just screams SUMMER. I'm not a great swimmer, but I don't mind sitting down by the pool while my children I swim if I have a good book and a pina colada smoothie on hand. What I love about these smoothies is that you can make your own smoothie “kits” and store them in your freezer so you always have a piña colada just a few seconds away.

You will need: 1 can of crushed pineapple {in real juice} 2 small cartons of vanilla Greek yogurt {Roasted coconut vanilla is delicious in this if your local grocery store takes it!} 1 can of sweetened coconut milk Come on ! Create your smoothie “kits” by making ice cubes from yogurt and pineapple. Place the yogurt and pineapple {juice and all} in an ice cube tray and freeze until solid. You should get 6 yogurt cubes from each yogurt container and 18-21 pineapple cubes from your can.

Once the cubes are frozen, place 4 yogurt cubes and 6 or 7 pineapple cubes in a freezer bag. You will get 3 shake “kits” from this recipe and each kit makes 2 shakes. To make smoothies: Pour the contents of a "kit" into your blender. Add 2/3 cup of sweetened coconut milk and 1 cup of regular milk. {If you can't find sweetened coconut milk, just add a little sugar to your regular coconut milk until it's as sweet as you like.} Blend until smooth, add a little extra milk if it's too thick, and serve. Easy cheesy and super delicious! I love that there is no ice in this recipe to dilute it. Frozen yogurt and pineapple cubes mean every smoothie is full of flavor! Now that I have smoothie kits in my freezer, I'm ready to hang out in the pool all summer! Thank you so much to Jamielyn for letting me share this recipe today. Everyone have a great summer!
