Pasta with Italian Sausage and Vegetables

This is the type of pasta that I love! It is a very easy, fast preparation and the flavor is incredible. Pasta and sausage are already very good ingredients to have an excellent result, but if we also add some fresh and healthy vegetables such as asparagus that are in season, the result will be a very complete dish. Simply wonderful, nothing else is needed!

I use a short pasta that I have at the moment, it can be macaroni, campanelle, shells or my favorite if I can get it, the orecchiette (pasta in the shape of ears) but unfortunately they are not very easy, so any of the above are going to be well because they absorb the liquid very well.

I think many have seen the Italian sausage on the market but have not tried it and do not know how to use it, so they do not buy it and do not know what they are missing. We do not need to put a lot of Italian sausage, it is very well seasoned so we do not have to season much more. It is a pork meat sausage with a very special flavor provided by anise seeds and fenel. It is found in different presentations, sweet with basil (sweet), medium spicy (mild) or spicy (hot). For this preparation I recommend using any of the last two, I prefer mild which is spicy but not too hot. The sausage that we are going to use is the one that comes ground, not the regular sausage.

The technique is very simple, the pasta is cooked according to the instructions but the water should not be as salty as the recipe has enough salt in its ingredients. Reserve a cup and a half of the water in which it was cooked, this serves to thicken any type of pasta sauce a little. In a frying pan, fry the onion and garlic, season a little, leave it for a couple of minutes. Add the meat, dissolve it with a spoon and leave it until it is cooked.

Then the broth of the pasta, the butter and the vegetables are incorporated, it is allowed to cook everything together and there is already this super rich sauce, very light and with a spectacular aroma! Finally, add the pasta to the pan to get a little flavor, so it is better to be al dente or serve the pasta directly on the plate and bathe with the sauce, as you prefer. To finish, add grated Parmesan cheese to taste … You can't imagine how delicious it is, you definitely have to try it!

  • 1 pound short pasta orecchiette, macaroni, campanelle, shells, etc.
  • 1 pound Italian ground sausage medium spicy (mild) or spicy (hot)
  • 1 1/2 cups pasta cooking water
  • 1/2 chopped big onion
  • 2 garlic cloves, finely chopped
  • 1/2 pound chopped vegetables (asparagus, broccoli, broccolini)
  • salt and pepper to taste
  • grated Parmesan cheese
  • 2 tablespoons oil for frying
  • 2 tablespoons unsalted butter

Do not over-salt the water in which the pasta is cooked since we are going to use it in the sauce and the ingredients already have enough salt.

The amount of water in the pasta that is added to the preparation of the sauce is relative, depending on the type of pasta and the volume, also on the type of vegetable. So it is better to go from less to more. Sometimes not all the liquid is needed, the sauce should not be too watery.
