This cheesy BBQ Chicken Pasta skillet is so easy to make! The pasta is cooked in the pan!

I'm totally in love with this barbecue chicken pasta skillet!

All it takes is a handful of basic ingredients and a skillet to make this downright delicious dinner!

Last year, when I lived in Canada, I went to dinner at a restaurant called Boston Pizza. They had tons of incredibly delicious pasta dishes on their menu, and I tried this one which was a BBQ pork pasta. It was like out of this world!

They served it baked in the ziti style, with a layer of melted cheese and crispy onion strings on top.

I don't know why it took me so long to recreate this dish, but here it is… only much better because everything is done in one pan!

I opted for a minced roast chicken, but if you wanted to throw in some minced pork, it would definitely work, too!

Start by sautéing some chopped onion in a little olive oil until tender. Add a little garlic at the end and cook until fragrant.

Next, simply add the chicken, the DRY pasta, a can of tomatoes, barbecue sauce, and a little chicken stock.

I love this dish because I can throw dry pasta! Absorb all the delicious flavors that really make this dish very special.

Once the pasta is tender, all that remains is to add the cheese right on top.

Open the lid and let the cheese melt for a few minutes, then top it off with another extra drizzle of barbecue sauce and some crispy onion strips (I just used the store-bought type), and your dinner is served!

My whole family swallowed this!

The delicious aroma of barbecue sauce and tomatoes is enough to appeal to children from outside. Seriously! It smells really good!

Let's face it, is there anything better than a pasta with cheese?

Pasta pan with barbecue chicken

With just a handful of ingredients, you can make this delicious barbecue chicken pasta skillet for dinner.

Ingredients

  • 2 tablespoons of olive oil

  • 3/4 cup chopped onion

  • 1 teaspoon minced garlic

  • 2 cups rotini pasta (dry)

  • 14.5 oz can diced small tomatoes (do not drain)

  • 1 1/2 cups chicken broth

  • 1/2 cup barbecue sauce

  • 1 1/2 cups minced roasted chicken

  • 1 1/2 cups shredded marbling cheddar cheese

  • 1/2 cup fried onion threads

  • 1 tablespoon freshly chopped coriander

Instructions

  1. Heat olive oil in a large skillet with a lid over medium heat. Sauté the chopped onion until tender, then add the garlic and stir until fragrant.
  2. Add pasta, diced tomatoes, chicken stock, barbecue sauce, and chicken to skillet. Stir to combine and simmer slightly. Reduce heat to low and simmer, stirring occasionally, until pasta is tender, about 15 minutes.
  3. Cover the pasta with the grated cheese and cover with the lid until the cheese melts, about 3 minutes. Finish with the fried onion strings, a little coriander and a drizzle of extra barbecue sauce if you like. Enjoy!

Notes

If desired, you can substitute shredded chicken for shredded chicken.
