Parsnip and ginger soup

Ginger Parsnip Soup

  • 2 carrots (peeled and finely chopped)
  • 2 medium onions (finely chopped)
  • 3 garlic cloves (finely chopped)
  • 1 thumb ginger (peeled and finely chopped)
  • 2 celery stalks (finely chopped)
  • 3 tablespoons of extra virgin olive oil
  • 1 pound parsnips (peeled and finely chopped)
  • salt and pepper to taste)
  • 7 cups of vegetable broth
  • handful of flat-leaf parsley (finely chopped)


  1. In a large saucepan over high heat, add 2 tablespoons olive oil, garlic, ginger, and onion. Cook for 2-3 minutes, until the onions are soft. Add celery and cook for a minute. Add carrots and cook for a minute. Add the parsnip, stir well, and add the vegetable stock. Bring to a boil, cover and simmer for 40 minutes. Use a blender or hand mixer to puree the soup until smooth.
  2. Add chopped parsley, 1 tablespoon olive oil, stir well, season with salt and pepper, and serve.
