I'll be honest: This latest semi-french fries recipe is driving me nuts. So crispy and loaded with delicious garlic and Italian flavors. I could never turn down garlic and cheese with fries and I don't think you can either!

And when I crave fries at home with my hoodie, I usually prepare mine instead of going to order takeout. And these … well, Wendy's natural french fries have nothing on these baked garlic parmesan and potato slices! So when I say this is worth doing, I mean it!

  • Large russet potatoes
  • Olive oil
  • Salt
  • Garlic powder
  • italian seasoning
  • Grated Parmesan cheese
  • Fresh parsley or coriander (optional)

HOW TO MAKE PARMESAN GARLIC POTATO WEDGES?

So easy that you will think you should do them every night. Go ahead, I won't fight you! Preheat oven to 375 and start preparing your potatoes (more on that below).

Lightly grease a large baking sheet and set it aside. Then, add the potato slices to a large bowl, drizzle with olive oil and stir to coat. In another small bowl, mix together the salt, garlic powder, and Italian seasoning. Sprinkle the potato slices with the grated cheese, stir to coat, then sprinkle with the seasoning mixture.

Place the cheese and seasoned potato slices on your prepared baking sheet in a single layer, skin side down. Bake for 25-35 minutes until potatoes are tender and golden brown. Sprinkle with freshly chopped parsley and dipping dressing.

I rinse my potatoes with cold water, rubbing any dirt first. Then I cut off any bad spots or "eyes" that are starting to grow.

Then I dry the potatoes (so they don't get slippery when you try to cut them) and place them on a cutting board. Take a large, sharp knife to cut them into pieces. Lay the potato down with the side away from you and cut it in half, lengthwise. Rotate the two cut halves down on the flat / inner side and cut them in half again. (Placing them flat side down ensures they won't roll and reduces the chances of you getting cut.)

Finally, carefully cut each wedge quarter in half through the center. Ta da!

If you have particularly large potatoes, you can cut some sections again. They should all be about an inch wide to bake more evenly.

  • 1/2 cup grated Parmesan cheese
  • optional: fresh parsley (or coriander), ranch dressing, or blue cheese for dipping
