I love the combination of sweet potatoes with chicken and eggs in this tasty dish. The sweet potatoes are sautéed with onions and thyme that make the whole dish feel like fall. It's a delicious and a great way to use up any leftovers from a rotisserie chicken. Top it with a few strokes of Sriracha or Frank’s hot sauce and it’s over-the-top good!

It's also the perfect one casserole, start by finishing it made in a frying pan. So that means there is less washing up too – a win in my book!

variations

  • Turkey with leftovers would also be fantastic instead of chicken.
  • To save time, you can use pre-cut sweet potatoes.
  • Divide the herbs using herbs de Provence, sage or rosemary instead of thyme.
