Pan Pan Shrimp with Broccolini and Tomatoes is perfect for busy weekends! One of my favorite ways to make shrimp is toasted in the oven, it comes out tender and flavorful every time! I added some of our favorite vegetables to make it a one pan meal and we loved it! A quick and LET low carbohydrate dish with tons of flavor, ready in less than 30 minutes, begins to finish.
Broccolini is a favorite in my house that looks like broccoli, but with smaller flowers and longer, thin stems. I also added grape tomatoes and finished the bowl with fresh lemon to lighten the whole bowl. In the picture here, half the recipe is on a half sheet pan, but the direction is doubled for a full sheet, four servings.

- 1 pound extra large peeled and devised, bespoke shrimp (28)
- 2 tbsp plus 2 tsp extra virgin olive oil, split
- 3 garlic cloves, chopped
- 3/4 tsp kosher salt
- 1/8 teaspoon crushed red pepper, optional
- freshly ground black pepper, to taste
- spray of olive oil
- 2 bundles, 12 ounces broccolini, ends trimmed (12 skewers)
- 1 cup of grape tomatoes, halved
- 1 teaspoon minced fresh oregano
- 2 tablespoons fresh lemon juice
Preheat oven to 400 degrees.
Put shrimp in a medium bowl with 2 teaspoons olive oil, garlic, 1/4 teaspoon salt, red pepper flakes if using and black pepper. Toss gently to cover and set aside.
Spray a large plate with olive oil spray. Put broccolini and tomatoes on the plate and toss with 2 tablespoons olive oil, ½ teaspoon salt, pepper and oregano. Spread out in an even layer. Roast for 15 minutes and toss halfway through.
Remove the sheet pan from the oven and add the shrimp, and evenly place them around the vegetables. Fry for 8 minutes.
Top everything with lemon juice and serve.
