Paleo Jalapeno Popper Chicken Chili Recipe
This delicious, hearty, bean-less chili recipe made in slow cooker with ground chicken, ground beef and sweet potatoes – the perfect combination. Also great in the pressure cabinet (directions provided both)!
From Juli Bauer & # 39; s Paleo cookbook, this is possibly the easiest recipe for slow chili I've ever made because it's very little prep! Just throw all the ingredients in a slow cooker – no need to brown the ground meat or any of the other ingredients first. Once the meat is cooked, you break it up with a wooden spoon – genius! I wasn't sure how it was going to turn out, so I cracked the meat in a slow cooker with my hands so it wasn't a big piece of meat. After it cooked, I broke it up a bit more, and as you can see in the image below, it worked well.
This was pretty spicy, the original recipe requires 1/2 teaspoon crushed red pepper flakes plus two jalapeños. Next time I do this (yes, next time) I'll cut down red pepper flakes or leave it completely out. Jalapeños have enough heat for my wimpy taste buds. I topped mine with the dice of avocado and just a little goat cheese (totally optional), which helped balance the heat. This gives a lot, leftovers can be frozen for future meals when you are busy cooking.
And since so many ask, even though I have and love my instant pot, I still love my slow cooker! I Have 6 Quart Hamilton Beach Set Forget Programmable Slow Cooker (affiliate link). I love it because you can adjust the time you want it to cook and it automatically gets hot when done. It also has a probe for meat that automatically closes when done. I hated my old crock pot, it burned everything and my food had a weird taste. This slow cooker is so big, I actually own several!

This lightly cooked Slow Cooker Paleo Jalapeno Popper Chicken Chili, perfect for autumn, soccer games and chili season!
- 1 medium white onion, cubes
- 3 cloves of chopped garlic
- 1 red bell pepper, cubes
- 2 jalapeños, seeds removed
- 1 large sweet potato, 14 oz
- 1 kg 93% lean chicken
- 1 pound 95% lean meat
- 2 tsp smoked paprika
- 2 teaspoons chili powder
- 2 teaspoons dried oregano
- 2 tsp kosher salt
- 1 tsp ground cumin
- 1/4 teaspoon red pepper flakes
- 1 14 oz can petite cubes with tomatoes
- 1 cup reduced sodium chicken broth
- chopped lamps for decoration
- 8 oz diced avocado, from 2 small hare
- 4 oz goat cheese, optional discharge for whole30
Slow Cooker:

Put all ingredients except scallion, avocado and goat cheese in slow cooker and cook for a low 8 hours. Once done, break up the ground meat with a wooden spoon and add half the goat cheese if using.

Instant Pot:
