  • 165 g of soft butter
  • 3/4 cup powdered sugar
  • 3 lightly beaten eggs
  • 1 1/4 cup flour with yeast
  • 1 grated orange peel
  • 1/2 cup milk
  • 2 drops of red liquid food coloring
  • 2 drops of yellow liquid food coloring
  • 45 g Maltesers
  • 250 g of M and M
  • 1 teaspoon of sugar

Citrus frosting

  • 2 butter spoons
  • 1 1/2 cups icing sugar
  • 1 tablespoon of cocoa
  • 2 tablespoons of lukewarm water
  • 1/2 tablespoon of fresh lemon juice
  • 1/2 tablespoon of fresh orange juice

  1. Preheat oven to 190C (forced 170C fan).

  2. Beat the butter and icing sugar until creamy.

  3. Add the eggs, beating between each addition. Add milk.

  4. Sift the flour 3 times and fold the flour, orange peel and food coloring through the mixture.

  5. Spoon dough into small cupcake pans, half filled. Place a Malteser on each cupcake, pressing down.

  6. Bake for 15-20 minutes until the cupcakes come out when lightly touched. Let cool completely.

  7. Icing: Mix all ingredients, beat until well combined.

  8. Spread or paint the frosting, decorate with M&M and sprinkle colored sugar over the cupcakes.

  9. Store in an airtight container or on a plastic-covered tray in the refrigerator until needed.

I used orange colored sugar. To make the sugar orange, I put a few drops of yellow and red food coloring in a covered container with about ½ cup powdered sugar and stir it. I prefer to use M & M’s with orange flavor.
