This recipe is the reason 4657838 why I have the best readers. Not only did I have an amazing response to my recent personal history blog post, I didn't just share this crazy idea of adding raw beets to your smoothie BUT. You read it, left comments and tried the shake! And when I asked what I should do with the greens, many of you responded in the post and on my social media with your suggestions. THANKS!
I read them all and as soon as I got a new batch of beets for our daily smoothies, I set out to experiment with the greens. I buy organic beets and they are so big and the greens are so full and long! It seems wasteful to throw them away. I needed ideas and you shared yours with me. Many of you use them as spinach and that was a light bulb moment for me.
So today's recipe is the result.

Spicy pasta with chorizo and green beets. All cooked together in a pot in just 20 minutes. It's hearty, satisfying, absolutely delicious, gluten-free (if you use gluten-free pasta) and kid-approved. A total winner!
One pot dinners save a lot of time, but for me they also save sanity. I had a very busy week, but thanks to my pasta dishes and slow cookers, dinner time didn't suffer. It was a breeze!

Ingredients
- 2 tablespoons of olive oil
- 1/2 cup chopped yellow onion
- 2 teaspoons minced garlic
- 3 Polish or sliced smoked sausages
- beet leaves of two large washed beets, chopped
- 1 cup crushed tomatoes
- 1.5 cup chicken stock or water
- 3 cups raw tie dough
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and sausage and sauté for 2 minutes.
- Add the beet greens and sauté, stirring frequently, for 2 minutes.
- Add crushed tomatoes, chicken stock, or water and dry pasta.
- Bring the mixture to a boil. Reduce heat and simmer for 15 minutes, stirring occasionally, until pasta is cooked.
- Remove from heat and let rest for 10 minutes before serving.
Recipe Notes
You can use chicken instead of sausage or beans for a meatless version.
