  • 500 grams of small or medium octopuses
  • 1 small glass of white wine
  • 2 small glasses of water
  • 3 onions
  • 4 garlic cloves
  • 1 bay leaf
  • 2 chillies
  • 3 ripe tomatoes
  • 1 jet of virgin olive oil
  • 1 pinch of salt

Peel and julienne the onion. Tap the garlic cloves to open them with the flat of a knife.

To prepare the sauce for the octopus with onions put a frying pan with oil on the fire and sauté the garlic until they are golden brown. Cook the onion in the same oil over low heat.

When the onion is transparent and well poached, add the chillies, the bay leaf and the grated tomatoes, stir everything together and turn up the heat so that the tomato is cooked a few minutes. Add the glass of white wine and the water, stir and leave on high heat for a few seconds until it boils, then lower the heat.

The octopuses that I have cooked are a little big, so I have removed the skin, if yours is small it is not necessary to remove it, you rinse them well and dry them so that they do not have water and that's it.

Put a little oil in a pan and sauté the clean pulpits, give them a few turns, take out and reserve.

    When the onion is sautéed, add the clean pulpits, cover the pan and let them simmer for about 20 minutes, or until you see that they are tender and there is no broth.
