Mojitos have soared in popularity in recent years, and you can find numerous variations of them beyond the traditional Mint Mojito. I have made several mojitos, such as strawberry, peach, and watermelon. Nectarine mojitos are among my favorites. Ok, maybe I say that about every Mojito I try.
Nectarines are very similar to peaches, but as much as I like peaches, I will choose a nectarine over a peach any day. To me, they taste much sweeter than peaches. When choosing nectarines, look for ones that have many spots on the skin. They tend to be sweeter. Use white nectarines, which tend to be the sweetest, or yellow, which are spicier and taste more like peaches.

1 1/3 cups nectarines, peeled and diced
¾ lime, cut in half and cut into thin slices
8-12 mint leaves
2 tablespoons of sugar
½ cup rum
½ cup of soda
Place the apricots, lime, and mint in a jar and mix. Add sugar and rum. Stir together.
Pour the mixture into 2 glasses filled with ice. Add ¼ cup of soda to each glass and serve.
