I think it may still be one of my favorite party plans! This year I will host a little Mother's Day brunch "Muffins with Mum" for friends and family. While we were working at the PTA, we organized several “Muffins with Mom” breakfasts where children can have their mothers come to school and have breakfast with them. The children are always very excited and the mothers love it too, so this year I decided to organize my own meeting with some of my fellow PTA members and their daughters. I went from "Muffins with Mom" ​​to "Muffins with Mum" because I was dying to organize a tea party. I love all of the beautiful girly mugs and teapots and thought Mother's Day brunch was the perfect excuse to do it. Since the British are all about their tea, I decided I would call it "Muffins with Mum", isn't it fun? The table is simple but beautiful and you can put it together in many different ways. I love color, so I chose a combination of pinks, yellows, blues, greens and then a nice touch of fuchsia to make things a little more interesting. I think mixing patterns and textures is always the way to go to create a table that really catches your eye. I bought several cups and saucers of tea in different patterns so that not everything was to match and then I combined them with dishes that had the same colors but different and simpler patterns.

Everything is placed on a beautiful curly white tablecloth and I have a secret to tell you, it's actually a curtain panel that I found in the free space! I couldn't believe how perfectly it worked along with the simple blue flower table runner that I put in the middle of the table.

Continuing with the spring floral theme, I made some simple paper flowers (the mother spiders to be exact) and made them into napkin rings. I am totally in love with how they turned out and have lots of ideas on what else I can do with them. They were really simple to do. Start with a piece of 12 x 12 inch scrapbook paper and cut it into 3 pieces so you have 3 sheets of 4 inch x 12 inch paper. Use scissors to cut each piece of paper into thin strips leaving about an inch uncut at the end. Using the uncut end, roll the paper into a tight roll. Add a drop of glue to the end of a floral wire and push it toward the center of the paper roll. Then twist the other end of the cable around a ring. I used plastic rings for shower curtains. Wrap the uncut end of the paper in floral tape, and then wrap the tape around the curtain ring, surrounding the entire ring until it is completely covered.

Separate the cut pieces of paper and you will get a beautiful paper spider spider to place on your spring table! I put a napkin through each ring and sat it on my plates and they made a really lovely pop of color and texture on the table.

Speaking of dishes, let's talk about tea party food. Of course, we have to have cupcakes, after all, they are cupcakes with mom. I made two flavors of muffins, dairy-free oatmeal and strawberry muffins and dairy-free blueberry lemon crumble muffins. the basics are the same for both flour, eggs, sugar, dairy-free silk yogurt alternative, but then separated. Strawberry Oatmeal Muffins contain oatmeal, fresh strawberries, and cinnamon. Its texture was more like a normal bun. They're topped with a sweet strawberry frosting made with a milk-free silk yogurt alternative. Kat, who came to help me taste the taste, liked them better.

Blueberry-Lemon Crumble muffins have fresh blueberries, lemon juice, and a delicious brown sugar crumble on top. These had a different texture that reminds me of one of my favorite traditional Portuguese desserts, Queijadinhas de leite. It's a little denser than a regular but super moist bun, and the fresh blueberries and bright lemon burst made them good in this world. I guess you know which one I liked the most :).

Along with the muffins, I'm serving small plates of strawberry silk dairy-free yogurt alternative and vanilla silk dairy-free yogurt and macarons, because everyone needs a sweet treat at a party!

Dairy-Free Strawberry Oatmeal Muffins with Strawberry Frosting

Fresh strawberries and oatmeal make these dairy-free muffins perfect for brunch.

Muffin

  • 1 c strawberry and silk milk free yogurt alternative

  • 1 c old-fashioned oatmeal

  • 1 egg

  • ¼ c canola oil

  • ½ cup packed brown sugar

  • 1 1/3 c of all-purpose flour

  • 1 teaspoon of baking soda

  • 1 teaspoon of cinnamon

  • ¼ teaspoon of salt

  • 1 ½ c fresh strawberries diced

Strawberry Icing

  • 1¼ c of powdered sugar

  • 2-3 tablespoons of almond milk

  • 1 tablespoon of strawberry jam

  • ¼ teaspoon vanilla

  • Preheat oven to 400 ° F.

  • Place the baking paper pans in 12 regular-size muffin pans, or grease a muffin pans.

  • In a small bowl, combine the yogurt and oatmeal.

  • In a large bowl, mix together the egg, oil, and brown sugar.

  • Add flour, baking soda, cinnamon, salt, and yogurt mixture (dough will be lumpy).

  • Gently fold the strawberries.

  • Divide the dough evenly between the prepared muffin filling almost to the top.

  • Bake 18-20 min. Or until golden. Immediately remove from pan.

Strawberry Icing

  • Place the powdered sugar in a medium bowl and slowly add the almond milk, strawberry jam, and vanilla, little by little, to make a smooth, pourable frosting.

  • Dip the chilled molds in the frosting and allow the frosting to harden.

  • Enjoy!

Dairy Free Cranberry Lemon Crumble Muffins

These lemon crumble and bleuberry muffins are dairy-free and packed with fresh fruit!

Crumbling

  • ½ cup flour

  • ¼ c light brown sugar

  • ¼ c of sugar

  • ½ teaspoon of cinnamon

  • 6 tablespoons margarine without cold salt

  • ¼ teaspoon of salt

Muffin

  • ¼ c unsalted margarine (4 tablespoons), softened

  • ¾ c Sugar

  • 2 eggs

  • 1 teaspoon grated lemon zest

  • 1/4 c lemon juice

  • 1 teaspoon of vanilla extract

  • Alternative c Vanilla silk dairy-free yogurt alternative

  • 1¼ c of flour + 2 tablespoons.

  • ½ teaspoon of baking soda

  • ¼ teaspoon of salt

  • 1 cup fresh blueberries

Crumble

  • In a small bowl, mix together the flour, sugar, light brown sugar, cinnamon, and salt.

  • Cut the margarine into small cubes and add to the dry mixture. Using two forks (or dough cutter), cut the margarine until crumbly and set aside.

muffin

  • In a medium bowl, mix margarine and sugar until fluffy.

  • Add eggs, lemon juice, zest, and vanilla, mix for about 1 minute.

  • Add vanilla yogurt and stir together.

  • Add flour, baking soda, and salt to the bowl and mix.

  • Gently add the blueberries.

  • Using a spoon, pour ¼ cup of dough into muffin tins.

  • Cover each bun equally with crumble.

  • Bake for 10-15 minutes until the tops of the muffins are golden brown and a toothpick inserted in the center comes out with just a few wet crumbs.

  • Cool for 5 minutes.

  • Enjoy!
