- 240 grams of basmati rice
- 1 carrot
- 1 leek
- 800 milliliters of vegetable broth or water
- 1 handful of raisins
- 1 handful of cashews
- 1 teaspoon grated orange zest
- ½ teaspoon of paprika
- 1 tablespoon of agave syrup
- ½ teaspoon whole cumin
- ½ teaspoon of salt
- 2 tablespoons of oil
- 2 tablespoons fresh coriander
Steps to follow to make this recipe: 1
Soak the raisins with warm water for 15 minutes, drain and reserve.
Cut the carrot and the leek In small pieces to continue with the preparation of Moroccan rice.
Heat a pot with oil and sauté the leek and carrot until the carrot begins to soften. Add the cumin and the orange zest and sauté a little until they start to release the aroma.
Add the raisins, cashews and the paprika and fry a couple of minutes more.
