Molletes (or open Mexican sandwich) are a delicious breakfast idea or perfect as a quick afternoon snack. Mexican food is no easier than that! By Mama Maggie’s Kitchen

Going to a restaurant can be a bit of a challenge for me. I can be picky about Mexican food. Once in Paris, my friends wanted to take me to a new Mexican restaurant. I reluctantly accepted. My thoughts, how bad can Mexican food be in a gastronomic paradise like Paris? In short, it was terrible! The restaurant was owned and operated by Italians, not Mexicans. They didn't even speak Spanish and completely destroyed everything we ordered that I passed on to the waitress. In turn, she sent the chief. He explained that his menu was intended for his French and non-Mexican customers. Then he asked me which authentic Mexican dish I think would appeal to the French. My answer: Molletes, or Mexican Sandwiches with Open Face.

The calves (pronounced: mo-YEH-tehs) are made with bolillo

(or Mexican bread), fried beans and Manchego cheese

. Then topped with salsa, usually Pico de Gallo. Do you see why I told this French chef to do this? It is really difficult to spoil this dish. So simple, even an Italian chef claiming to know Mexican cuisine could do it.

Do not cut the cheese. Cut the bread … In half. After coating a thin layer of refried beans on the bolillo, add cheese. It can be difficult to find some of our Mexican cheeses in the United States. I find it funny because I have no problem finding American cheeses in my grocery store in Mexico. Molletes are traditionally made with Manchego cheese. If you can't find it. You can replace with Monterey Jack

, medium white cheddar

or fontina. You want something that will easily melt under the grill.

Finally, garnish the Molletes with Pico de Gallo or your favorite salsa

. I like to add a little salsa juice so that it can be absorbed by the bread. Or add eggs. These open Mexican sandwiches are delicious for breakfast. Or add chorizo for a mid-afternoon snack. Fast and delicious. You can see why it’s a favorite in Mexico… (and maybe now Paris too). Enjoy!
