We are serving these Mini Taco Bowl bites as appetizers tomorrow night. If you are trying to find some last minute holiday snacks for the holidays, I highly recommend these little bites of delicacy. Almost everyone loves tacos and the way to bite is perfect. Or at least that's my opinion, ha ha! The husband and I made this batch of Mini Taco Bowl Bites for our meeting last week with friends. They were so successful that we decided to have them for our Christmas Eve party too! Children and adults were devouring these little versions of tacos.
Mini Taco Bowl Snacks
These little snacks are very easy to make. You can substitute the tablespoons of Tostitos if you are short on time. If you do, I recommend that you make sure your meat is drier as it will absorb the scoops much faster.
I found that making my own balls with corn tortillas is less complicated. Also, I've added some canned refried beans to the bottom in the past and that works great too.
INGREDIENTS 1 pound ground beef 2 tablespoons taco seasoning or homemade taco seasoning 1 diced tomato 6 jalapeño slices 12 corn tortillas Grated Cheddar Cheese
ADDRESSES Brown the ground meat and drain. Cut the jalapeños and add them to the meat. Add 1/4 cup water and taco seasoning and cook over medium heat until water is absorbed. Reduce heat to low. Heat each corn tortilla in the microwave for 30 seconds to soften. Using a 3-inch cutter (like the lid of a jar) cut 2 circles from each tortilla. Press each circle into the cup of a mini muffin tin, folding the sides as needed. Bake 350 for about 12 minutes (until tortilla is crisp). Place each shell on the rack to cool and fill with taco meat. Top with diced cheese and tomato and a coriander leaf (optional).
Making your own mini bowls is very simple and very tasty. I like to add a little salt to mine (I know it's bad for my health, ha ha). The addition of salt really makes them much tastier. I like that these are baked and not fried. However, they come with crisis.

When making your taco meat, don't be afraid to improve it and add your favorite Mexican seasoning. I kept this recipe simpler with a little jalapeña spices for everyone to enjoy. It would have gotten a little better with a little habanero if it didn't have kiddos on the guest lists.
The coriander and fresh tomato topping really added a great extra flavor in these little bites. You can always add a little spicy cheese too!
