These bite-sized mini burritos are a great prep snack for your New Years Eve party or any party. They only need to put them in the oven 10 minutes before you want to serve, and you'll have small parcels of toast to keep your guests happy.

These mini burritos were a delight at our boxing buffet.

I have to admit, we really don't do much for New Year's Eve. We walked away from the party a few days after Christmas. For us, New Year's Eve consists of a good meal and then snacks in front of the TV (so it's better than most nights).

We are about to go into the New Year countdown in time to see the clock strike midnight. Then we sleepily watch the televised fireworks before turning off the television and going to bed. So boring I know. I prefer to go out on a night that is not freezing, full, that serves expensive drinks and that it is impossible to get a taxi home. I prefer a warm and not too noisy place so that we can have a conversation.

Oh my goodness. I sound like I'm 85, not 35!

People say marriage and children do that to you, but I don't see it as a bad thing. I love my family and my home! I also love listening to my husband with his ridiculous grumpy and old comments about various things. It is quite comical with its moans, so it is not difficult to bear. Although they say it worsens with age. He is only 32 years old, so I am afraid to think about how he will be in his 70s.

His grumpiest comments usually come when I tell him I'm preparing a fish-based or vegetarian dinner. He's a dedicated carnivore, so I have to work hard to find meat-free dishes like these and these that pass Chris's test.

These burritos, on the other hand, would surely be a success. Filled with leftovers of slow-cooked beef, rice, gravy, chives, and melted cheese, all packed into small manual parcels, I don't think anyone can resist.

I used a round cookie cutter (9 cm in diameter) to get the little tortillas. You must get 5 mini tortillas from a large one. Each tortilla is covered with a tablespoon. shredded meat, a teaspoon of cooked rice, a teaspoon of chives / chives, half a teaspoon of sauce and a small pinch of cheese.

You will not be able to wrap and fold them completely. I just rolled them up (without sealing the ends of the tortilla), then wrapped them in aluminum foil and twisted them shut.

Once they are all sealed, place them on a baking sheet in the refrigerator.

Bring them back to room temperature before cooking (about half an hour out of the refrigerator you should). Then cook for 10 minutes at 170c / 325f until hot inside.

Serve them with a sour cream sauce.

Mini Burritos Appetizer

Mini burritos: an excellent appetizer for parties. Prepare, wrap in foil, and then reheat for 10 minutes in the oven before serving with a little sour cream.

Servings: 15 mini burritos


  • 3 large tortilla wraps
  • 15 teaspoons of cooked white rice
  • 15 tablespoons minced beef simmered (see notes below for ingredients and preparation for this)
  • 15 teaspoons of grated cheese
  • 5 tablespoons chives / chopped chives
  • 3 tablespoons of sauce


  • Use a 9 cm diameter cookie cutter to cut 15 mini tortillas from the 3 large tortillas. Place each on a square of kitchen paper.

  • In the center of each mini omelette, add a tablespoon of shredded meat, a teaspoon of cooked rice, a teaspoon of chives / chives, half a teaspoon of sauce and a pinch of cheese.

  • Press the fillings down with the back of a teaspoon and fold the tortilla so that the edges overlap slightly. Try to keep the filling in the tortillas. Wrap in the foil and twist the ends. Place on a tray and repeat with the remaining 14 burritos.

  • When you are ready to heat the burritos, place the pan in the oven at 170c / 325f for 10 minutes until hot.

  • If you want to prepare them in advance, simply refrigerate before cooking. Then, remove from the refrigerator and allow it to reach room temperature (about 30 minutes) before cooking according to the instructions above.

Recipe Notes

Slow cooked meat:You only need a small amount of slow-cooked meat, but I include instructions for cooking a slightly larger batch. It would be quite difficult to cook slowly in such a small batch without drying out.You can use 2/3 of it for another meal (serve 2 with potatoes and vegetables, or as a small cake filling), and save a third for mini burritos.Ingredients:1 tablespoon. Vegetable Oil 500 g / 17.5 oz. diced beef stew 1 tablespoon. plain flour pinch of salt and pepper 2 peeled garlic cloves small bottle of beer, ale or beer Instructions:Preheat oven to 130c / 250f. Heat the oil in an ovenproof skillet. Cover the pieces of meat with the flour, salt and pepper, then fry them in the oil until lightly browned. Add garlic and beer, stir to scrape up any chunks that may have stuck to the bottom of the pan. Bring to a boil, cover and place in the oven to cook for 3-3.5 hours, until the meat falls apart. Check every hour or so to make sure the pan doesn't dry out. Add a little hot water to the kettle if it starts to look too dry.
