Microwave scrambled eggs – made in a bowl in under 2 minutes! A brilliant cooking trick that tastes delicious and hardly needs cleaning.

These microwave eggs are one of my breakfast options to go on a busy day of the week. I love serving them with toast, bacon, pan fries, or fruit salad. Easy, fast and delicious!

My husband and I love eating eggs for breakfast. We have mini egg frittatas or omelets loaded with vegetables and cheese several days a week (sometimes even for dinner!) They are high in protein and low in fat and calories (unless you add a pound of cheese! Guilty!).

But my husband is the best scrambled egg / omelette maker, so it always turns out better than mine. And frankly, sometimes I don't have time to make scrambled eggs in the morning. Or I don't want to deal with cleaning.

My solution? Microwave scrambled eggs … in a bowl … in less than two minutes! If you have never tried this method, you will be amazed at how delicious they taste. Change life! Eggs are fluffy, creamy and taste just like scrambled eggs! You would never know that they came directly from the microwave.

Then just throw the bowl in the dishwasher. The easiest cleaning and a super easy and super healthy breakfast!

What you will need:

The basis for these microwave scrambled eggs is very simple. All you need is eggs, grated cheese, salt, pepper, and water.

If you want to add extras, you can absolutely. I added chopped spinach and red bell peppers. Just make sure to add the extra ingredients after whisking the egg and the egg whites.

Base

  • 3 egg whites
  • 1 egg
  • 1 tablespoon of grated cheese
  • Salt and pepper
  • 1 tablespoon of water

Additional features

  • Chopped spinach
  • Peppers
  • Ham cut into cubes
  • Bacon crumbles
  • Mushrooms
  • Onions

How to microwave scrambled eggs

Step 1: beat the eggs

Generously spray a microwave-safe container with cooking spray. Break the egg whites and the egg into the bowl. Add 1 tablespoon of water. Whisk together for a minute.

Step 2: add extras

Add grated cheese and additional preferred vegetables or meats if desired. Salt and pepper to taste.

Step 3: microwave the eggs

Microwave container and microwave on high for 45 seconds. Stir the eggs, then microwave for an additional 45 seconds.

Step 4: Up and serve!

Remove from microwave and add desired ingredients. I love filling my microwave eggs with diced fresh tomatoes and tomato sauce. Other ingredients like sauce, green onions, or diced avocado also taste great.

Tips

  • You can use all whole eggs or all egg whites if you prefer.
  • You can also sub the tablespoon of milk water.
  • Make sure to spray your bowl with cooking spray so the eggs don't stick to the bottom!
  • If you prefer, you can use a large mug instead of a bowl, just make sure it's large enough.
  • Watch the eggs closely so they don't swell over the edges of the bowl or explode.
