Father's Day is approaching and I, for my part, plan to celebrate with men's food. And by man's food, I totally mean meatballs. I'm a meatball girl, okay?
I joined Farm Rich to bring you this recipe and they asked me to specifically create something that Dad would love. I mean, I thought I'd throw some of their mozzarella sticks in the oven to serve with a plate of ranch dressing, but I thought maybe they were looking for something more creative than that. Although, really, how can you go wrong with those cheese and ranch sticks?
While browsing her product list in hopes of finding inspiration, I couldn't help but notice her little mozzarella bites. They're pizza-style dumplings with sticky mozzarella lurking inside. Obviously they were quite impossible to resist.
Inspiration hit and I knew I was going to make a meatball sub. Holy God.

I popped a packet of those mozzarella bites into the bottom of a saucepan, covered them with some of their thawed meatballs and a jar of marinara, and then baked them with a little extra cheese on top. You can never have enough cheese when it comes to meatball sandwiches, right?
Maybe I like it better than a traditional meatball submarine! It might have something to do with cheese-stuffed bread bites. It is such a fun and unexpected surprise when
bite one of the bites. They are slightly sweet and garlic. I really loved the taste of these little ones!
This saucepan is definitely a new favorite in my house. The soft bread, the melty cheese, the Italian-style meatballs.
I think they will love it as much as we do … especially since they are just 4 simple ingredients and ready in just 20 minutes! Serve this with a green salad on the side and you're ready for Father's Day dinner (or any day!).
Talk about maintaining real life, very well. Simple dinners like this are what real life in my house is made of!

Meatball of Albondigas

Calories: 300 kcal
Comfort food that is always super easy and convenient! Love this one!
1 packet farm-rich mozzarella bites
1/2 package of meatballs rich in Italian style about 25 meatballs thawed
24 ounce jar marinara
1/2 cup grated mozzarella cheese
Preheat oven to 400 degrees.
Place the mozzarella bites in the bottom of a 9×13 pan.
Top with meatballs and marinara. Sprinkle cheese on top.
Bake 15 minutes or until heated through and cheese is melted.
