Out of the soft, my cousin sent me a message that she and her family were on their way to visit San Diego. She lives in Texas and I had not seen her for a bizillion years. I was so excited to see her, but the thought of cooking for another 5 people, on the other hand, was not that exciting. She has 3 teenagers. What do teens even eat today? I had to think of something that everyone liked…. like orange chicken. But you all know me. I had to add my own Mama Maggie twist. That was about when I came up with the idea of making Mandarin Orange Chicken Lettuce Wraps!
I used Crazy Cuizine's Mandarin Orange Chicken for a couple of reasons. One, I would spend as little time as possible in the kitchen, and all Crazy Cuizine products can be made in just 18 minutes or less. Mandarin Orange Chicken is sliced chicken breast slightly attenuated and glazed in a delicately sweet Mandarin orange sauce, which would be satisfying for a starter or meal! In the end, I knew everyone would love it!
It's blazing hot in San Diego right now (80 degrees) and by no means will I turn on the stove. The preferred method of making Crazy Cuizine Mandarin Orange Chicken is the oven, but I made this one on the stove instead – I love how time-saving these recipes are and it really couldn't be easier! Just watch it. Rotate constantly. Then add the sauce. Throw it all together and it's ready!
Mandarin Orange Chicken Salad Wraps are ridiculously easy to make. Mandarin sauce is so good; I wish they would bottle it so I can use it on everything! Just run the package under hot water first and presto – delicious restaurant-quality deliciousness at your fingertips!
Some moms like to use romaine and make miniature boats. I used iceberg lettuce. It was on sale and I like to save a penny when I can, especially when feeding 5 extra people.
Mandarin Orange Chicken Lettuce Wraps was a big hit with the whole family. I received so many compliments and I really didn't do anything except maybe heat this and throw it. The chicken is soft and tender, and the orange sauce is tangy and sweet. Yum. Yum. This is the easiest recipe and tastes seriously better than taking out. Plus it is far more affordable!
For those of you who have time to chop in the kitchen, here are some additional topping ideas:
- shredded carrots
- thinly sliced zucchini
- thin slices of green pepper
- green onions
- fine dice, red onion
