These low-carb jalapeƱo pancakes are an incredible flavor adventure – a combination of sweet, salty, and spicy!

My love for pancakes started in my sixth grade French class. Back then we were naive enough to believe that the French only ate croissants, baguettes and crepes … so I really wanted to go to Paris!

In the spring of that year, our teacher brought pancake pans for Pancake Day (which in my opinion should have been declared a national holiday) and we went to TOWN for those things.

ā€¦ Of course, filling them with not-so-keto friendly treats.

Thinking back on those delicious days (and watching the Food Network late one night) made me wonder how I could make pancakes that were unique and low in carbs.

So … I have a very fun and super exciting recipe to share with you today.

That's right, the title of this post is not a typo. I'm really excited to share with you my new recipe for friendly keto low carb jalapeno pancakes!

Hopefully the confused expression on his face has become intrigued by now. Trust me on this one: This is an amazing combination of sweet, salty, and spicy.

These goodies are great for both meals and snacks, depending on how much you want!

They are made with cream cheese, eggs, jalapeƱos, vanilla, sukrin and BACON.

Low carb jalapeno pancakes

Spicy low carb and keto friendly crepes with sweet cream cheese and bacon filling

  • 4-6 servings 1x

Ingredients

Crepes

  • 4 eggs
  • 4 ounces cream cheese (room temperature)
  • 1 tablespoon. Butter
  • 2 teaspoons of sugar substitute (I used Sukrin)
  • 3ā€“4 tablespoons finely diced pickled jalapeƱos

Filling

  • 4 ounces cream cheese (room temperature)
  • 4 strips of cooked bacon
  • 1 teaspoon of vanilla
  • 1 to 2 teaspoons of sugar substitute

Instructions

For pancakes

  1. Combine eggs, cream cheese, butter, and sugar substitute in blender until smooth. the mixture will be liquid
  2. In a nonstick skillet over medium low heat, pour a small portion of the mixture
  3. Cook like a pancake, it will be thin like traditional pancakes

To fill

  1. Mix cream cheese, sub sugar and vanilla. Whisk until fluffy and incorporate the crushed cooked bacon
  2. Place desired amount of filling on crepe and roll / fold gently

Notes

Easy to eat preparation Store cream cheese and crepes separately. Reheat crepe in skillet over low heat or microwave for 30 seconds. Cream cheese should be warm to fully combine with egg in blender.
