Low carb chicken zoodles are a healthy and easy dinner for the summer months!

I mentioned before that we eat a lot of vegetables in our meals, but we are not strictly vegetarians. Occasionally we eat meat or fish, but most of the time we cook without meat, just because we enjoy vegetarian dishes more.

To top it off, I'm at a new limit for my dairy allergy, so all the dishes I make for myself are dairy-free and generally vegetarian. I tend to bookmark those recipes on my blog, so if you follow a special diet, it should be easy for you to spot the recipes you can enjoy.

If we had to "label" our diet, it would be a reduction. So we will eat a mainly vegetarian diet, with lots of seasonal vegetables and fruits, with occasionally eggs, fish or meat.

Mitja will also consume dairy products, such as yogurt or cheese, but currently I do not consume dairy products, so I would take soy milk, coconut milk or cream and occasionally vegan cheese, yogurt or ice cream.

It's been a few years since I struggled with dairy allergy, I cleaned up and was able to eat dairy again for about 3 years, but apparently it was only a short trip.

That doesn't really bother me that much as there are so many plant-based alternatives today that are also delicious, it's really exciting to try new combinations… but sometimes it's a little difficult to say no to normal food when I go out to eat with friends.

So most of the time I will be able to stay away from the itchy foods, but sometimes I will compare the food with the consequences and still have something to eat. Yes, I like to live dangerously 🙂

Anyway, let's go back to this recipe… it's dairy-free and gluten-free (use gluten-free soy sauce to be sure!), But unfortunately it's not vegan and of course non-vegetarian. It is also low in carbohydrates, making it perfect if you are trying to lose a pound or two before summer.

This healthy low-carb chicken noodle recipe is easy to make, too. Simply marinate and broil the chicken, and spiral the zucchini while the chicken is cooking. When the chicken is done, remove it from the pan and place the zucchini noodles in the same pan, stirring quickly, just a minute to soften. And that's it!

And if you're a little lazy or it's too hot to cook, you can keep the noodles raw and just toss them a little in the sauce in the pan.

Low Carb Chicken Noodles {Zucchini Noodles}

Low carb chicken zoodles are a healthy and easy dinner for the summer months! Low carb, gluten free and dairy free food.

Ingredients

  • 200 g chicken breast
  • 2 zucchini
  • gluten-free soy sauce
  • salt, pepper to taste
  • 1 tablespoon of olive oil
  • 2 tablespoons of sesame seeds
  • 1 tablespoon of peanuts

Instructions

  1. Season the chicken breast with salt and pepper and, if necessary, cut it into smaller fillets. Add a few drops of soy sauce and spread evenly over the meat. Let marinate for 30 minutes or overnight.
  2. Heat a skillet over medium heat, then add the olive oil. Place chicken in skillet and cook for about 4-5 minutes over medium heat. When the chicken is golden and crispy, flip it over and cook for a couple of minutes on the other side.
  3. While the chicken is cooking, wash the zucchini, pat dry, then use a spiralizer or julienne peeler, cut the zucchini into thin strips that resemble noodles.
  4. When the chicken is cooked, with a crispy golden skin on both sides, remove it from the pan and add the zucchini noodles to the pan. Mix the skillet with tongs for just a minute or two so the zucchini softens a bit and soaks up the sauces in the skillet. Do not overcook and do not let the zucchini soften, they should be crispy. Remove from the pan and place on a plate or in a bowl.
  5. Cut the chicken into strips and place it on top of the zucchini noodles. Top with some sesame and peanut seeds, and serve.
